Inu, pravda to sice nen\u00ed, ale p\u0159esto chleb\u00ed\u010dky vn\u00edm\u00e1me jako sv\u00e9ho druhu n\u00e1rodn\u00ed bohatstv\u00ed. V\u00edte, kde se vzaly? Jak promluvily do na\u0161ich d\u011bjin a\u00a0kde je um\u011bj\u00ed na Sedmi\u010dce p\u0159ipravit nejl\u00e9pe, a\u00a0kdo se tak stal v\u00edt\u011bzem v\u00a0na\u0161em slep\u00e9m ochutn\u00e1vkov\u00e9m testu? Chleb\u00ed\u010dky Letn\u00e1, nebo Libe\u0159sk\u00e9 lah\u016fdky?<\/p>\r\n<p>[\/perex]<\/p>\r\n<p><strong><em>\u201eChleb\u00ed\u010dky, a\u0165 ji\u017e oblo\u017een\u00e9 nebo upraven\u00e9 jinak, jsou nejobl\u00edben\u011bj\u0161\u00ed pokrmy studen\u00e9 kuchyn\u011b, a\u00a0to nejen proto, \u017ee lze k\u00a0jejich v\u00fdrob\u011b pou\u017e\u00edt nejrozmanit\u011bj\u0161\u00ed materi\u00e1l a\u00a0\u017ee nevy\u017eaduj\u00ed \u017e\u00e1dn\u00e9 dal\u0161\u00ed p\u0159\u00edlohy, ale hlavn\u011b tak\u00e9 proto, \u017ee je m\u016f\u017eeme pod\u00e1vat ke ka\u017ed\u00e9 p\u0159\u00edle\u017eitosti.\u201c<\/em><\/strong><br \/>\r\n<strong><em>Vil\u00e9m Vrabec: Modern\u00ed studen\u00e1 kuchyn\u011b, 1968<\/em><\/strong><\/p>\r\n<p>S\u00a0cit\u00e1tem zn\u00e1m\u00e9ho kucha\u0159sk\u00e9ho mistra, kter\u00fd po\u0159\u00e1dal kurzy studen\u00e9 kuchyn\u011b ji\u017e v\u00a0meziv\u00e1le\u010dn\u00e9 dob\u011b a\u00a0proslavil se dodnes pou\u017e\u00edvanou a\u00a0do mnoha jazyk\u016f p\u0159elo\u017eenou Velkou kucha\u0159kou, by si asi v\u00a0\u010cesku i\u00a0po pades\u00e1ti letech st\u011b\u017e\u00ed n\u011bkdo troufl v\u00e1\u017en\u011b polemizovat. Ostatn\u011b pr\u00e1v\u011b te\u010f v\u00a0prosinci, k\u00a0n\u011bmu\u017e pat\u0159\u00ed r\u016fzn\u00e9 v\u00e1no\u010dn\u00ed ve\u010d\u00edrky a\u00a0silvestrovsk\u00e9 oslavy, se konzumaci oblo\u017een\u00fdch chleb\u00ed\u010dk\u016f nevyhnou ani mnoz\u00ed z\u00a0t\u011bch, kte\u0159\u00ed se jich po zbytek roku stran\u00ed. Z\u00e1rove\u0148 plat\u00ed, \u017ee kdy\u017e se zakusujeme do kraj\u00ed\u010dku veky s\u00a0v\u00edce \u010di m\u00e9n\u011b povedenou kombinac\u00ed\u00a0r\u016fzn\u00fdch obloh, m\u00e1me co do \u010din\u011bn\u00ed s\u00a0n\u011b\u010d\u00edm echtovn\u011b \u010desk\u00fdm. Oblo\u017een\u00fd chleb\u00ed\u010dek je\u00a0endemick\u00e1 delikatesa, na ni\u017e \u0159ada cizinc\u016f p\u0159i prvn\u00edm setk\u00e1n\u00ed reaguje se zna\u010dn\u011b sm\u00ed\u0161en\u00fdmi pocity, ot\u00e1zkami \u201ejak se to j\u00ed?\u201c\u00a0a\u00a0nonverb\u00e1ln\u00edmi projevy nikoliv nepodobn\u00fdmi chov\u00e1n\u00ed \u010desk\u00e9ho turisty, p\u0159ed kter\u00e9ho byl v\u00a0p\u0159\u00edmo\u0159sk\u00e9 restauraci poprv\u00e9 v\u00a0jeho \u017eivot\u011b polo\u017een tal\u00ed\u0159 s\u00a0va\u0159en\u00fdm krabem a\u00a0n\u00e1\u010din\u00ed k\u00a0jeho konzumaci. (A\u00a0ruku na srdce, komu z\u00a0n\u00e1s domorodc\u016f nikdy z\u00a0chleb\u00ed\u010dku nespadl kus vejce opatlan\u00e9ho majon\u00e9zou na ciz\u00ed koberec?)<\/p>\r\n<p>Samoz\u0159ejm\u011b, k\u00a0n\u00e1padu polo\u017eit n\u011bco na pl\u00e1tek pe\u010diva a\u00a0dop\u0159\u00e1t si tak rychl\u00e9 j\u00eddlo bez p\u0159\u00edbor\u016f a\u00a0bez velk\u00e9ho stolov\u00e1n\u00ed nen\u00ed zapot\u0159eb\u00ed b\u016fhv\u00edjak velk\u00e9ho ducha ani gastronomick\u00e9 invence. Prvn\u00ed oblo\u017een\u00e9 chleby jsou podle n\u011bkter\u00fdch pramen\u016f dolo\u017eeny ji\u017e v\u00a06.&nbsp;stolet\u00ed, anglick\u00e9 sendvi\u010de v\u00a0konfiguraci kraj\u00edc-n\u00e1pl\u0148-kraj\u00edc maj\u00ed sv\u00e9ho \u00fadajn\u00e9ho p\u016fvodce v\u00a0hrab\u011bti ze Sandwiche, kter\u00fd \u017eil v\u00a018.&nbsp;stolet\u00ed. Ani r\u016fzn\u00e9 druhy tzv. otev\u0159en\u00fdch sendvi\u010d\u016f, mezi n\u011b\u017e \u010desk\u00fd oblo\u017een\u00fd chleb\u00ed\u010dek typov\u011b pat\u0159\u00ed a\u00a0kter\u00e9 maj\u00ed pe\u010divo pouze vespod, nejsou v\u00a0evropsk\u00fdch n\u00e1rodn\u00edch kuchyn\u00edch ni\u010d\u00edm v\u00fdjime\u010dn\u00fdm. Skandin\u00e1vie m\u00e1 sv\u00e9 sm\u00f8rrebr\u00f8d, Francie prohla\u0161uje za sv\u016fj vyn\u00e1lez jednohubky\u00a0\u2013 kanapky. P\u0159i proch\u00e1zce po tradi\u010dn\u00ed v\u00edde\u0148sk\u00e9 n\u00e1kupn\u00ed t\u0159\u00edd\u011b Mariahilferstrasse zase mo\u017en\u00e1 va\u0161e o\u010di upout\u00e1 velk\u00fd v\u00fdklad lah\u016fdk\u00e1\u0159stv\u00ed Trzesniewski pln\u00fd \u201eBr\u00f6tchen\u201c (chleb\u00ed\u010dk\u016f); \u201ejasn\u011b, rakousko-uhersk\u00e9 d\u011bdictv\u00ed,\u201c \u0159eknete si a\u00a0p\u0159istoup\u00edte bl\u00ed\u017ee, abyste se pod\u00edvali, kolik cht\u011bj\u00ed za \u0161unkov\u00fd s\u00a0vaj\u00ed\u010dkem\u00a0\u2013 ale ne, nen\u00ed to ono, obloha v\u016fbec nesed\u00ed, tvar taky ne,\u00a0a\u00a0co ten chleba?!<\/p>\r\n<p>Ano, to, co \u010din\u00ed tradi\u010dn\u00ed \u010desk\u00fd oblo\u017een\u00fd chleb\u00ed\u010dek v\u00fdjime\u010dn\u00fdm a\u00a0jinde nev\u00eddan\u00fdm (tedy s\u00a0v\u00fdjimkou Slovenska a\u00a0hrstky rakousk\u00fdch podnik\u016f s\u00a0\u010deskoslovensk\u00fdmi ko\u0159eny), je krom\u011b jeho charakteristick\u00fdch komponent, obvykle obsahuj\u00edc\u00edch v\u00a0n\u011bjak\u00e9 podob\u011b majon\u00e9zu, p\u0159edev\u0161\u00edm jeho stavebn\u00ed z\u00e1klad. Tedy veka, \u010dasto vzhledem k\u00a0hlavn\u00edmu zp\u016fsobu pou\u017eit\u00ed zvan\u00e1 \u201echleb\u00ed\u010dkov\u00e1\u201c. Toto pe\u010divo se od klasick\u00e9 b\u00edl\u00e9 bagety, kter\u00e9 my \u010ce\u0161i \u0159\u00edk\u00e1me \u201efrancouzsk\u00e1\u201c, podstatn\u011b li\u0161\u00ed t\u00edm, \u017ee krom\u011b mouky, vody a\u00a0kvasnic obsahuje tak\u00e9 m\u00e1slo a\u00a0ml\u00e9ko. D\u00edky tomuto slo\u017een\u00ed je veka vl\u00e1\u010dn\u011bj\u0161\u00ed ne\u017e bageta a\u00a0tolik nenas\u00e1kne vlhk\u00fdmi ingrediencemi, je\u017e jsou na ni p\u0159i v\u00fdrob\u011b oblo\u017een\u00fdch chleb\u00ed\u010dk\u016f skl\u00e1d\u00e1ny. \u201eImpregna\u010dn\u00ed\u201c efekt m\u00e1 ov\u0161em i\u00a0mastn\u00fd z\u00e1klad, kter\u00fd na chleb\u00ed\u010dk\u00e1ch tvo\u0159\u00ed prvn\u00ed vrstvu, tedy obvykle m\u00e1slo nebo majon\u00e9zov\u00fd sal\u00e1t.<\/p>\r\n<p><a href=\"https:\/\/www.praha7.cz\/chlebicek-nas-vezdejsi\/chlebicky_drobny-kopie\/\" rel=\"attachment wp-att-52594\"><img loading=\"lazy\" src=\"https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/11\/chlebicky_drobny-kopie.jpg\" alt=\"\" width=\"1083\" height=\"667\" class=\"alignnone wp-image-52594 size-full\" srcset=\"https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/11\/chlebicky_drobny-kopie.jpg 1083w, https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/11\/chlebicky_drobny-kopie-600x370.jpg 600w, https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/11\/chlebicky_drobny-kopie-768x473.jpg 768w\" sizes=\"(max-width: 1083px) 100vw, 1083px\" \/><\/a><\/p>\r\n<p><strong>Za\u010d vd\u011b\u010d\u00edme mlsn\u00e9mu mal\u00ed\u0159i<\/strong><br \/>\r\nCel\u00e9 to n\u011bkdy kolem roku 1916 vymyslel slavn\u00fd pra\u017esk\u00fd lah\u016fdk\u00e1\u0159 Jan Paukert. Toho roku si spole\u010dn\u011b s\u00a0man\u017eelkou \u0160t\u011bp\u00e1nkou otev\u0159el lah\u016fdk\u00e1\u0159stv\u00ed na pra\u017esk\u00e9 N\u00e1rodn\u00ed (tehdy Ferdinandov\u011b) t\u0159\u00edd\u011b, aby tu z\u00faro\u010dil zku\u0161enosti nabyt\u00e9 prac\u00ed v\u00a0p\u0159edn\u00edch evropsk\u00fdch lah\u016fdk\u00e1\u0159stv\u00edch t\u00e9 doby. Nedlouho pot\u00e9 nab\u00eddl z\u00e1kazn\u00edk\u016fm tak\u00e9 novinku\u00a0\u2013 oblo\u017een\u00fd chleb\u00ed\u010dek v\u00a0podob\u011b, v\u00a0jak\u00e9 jej zn\u00e1me dodnes. Podle rodinn\u00e9 legendy vd\u011b\u010d\u00edme za vznik chleb\u00ed\u010dku p\u0159\u00edteli Jana Paukerta, mal\u00ed\u0159i Janu ryt\u00ed\u0159i Skraml\u00edkovi, kter\u00fd m\u011bl nedaleko lah\u016fdk\u00e1\u0159stv\u00ed sv\u016fj ateli\u00e9r. Do n\u011bj si od Paukerta nech\u00e1val pos\u00edlat jednohubky, ale zd\u00e1ly se mu p\u0159\u00edli\u0161 mal\u00e9. Sv\u011b\u0159il se Paukertovi, \u017ee by si p\u0159\u00e1l n\u011bco \u201etak na dv\u011b na t\u0159i kousnut\u00ed\u201c. Paukert mu tedy nechal vyrobit chleb\u00ed\u010dek\u00a0\u2013 ten \u00fapln\u011b prvn\u00ed pr\u00fd byl vykrojen\u00fd z\u00a0pl\u00e1tku chleba (na tukovou veku, tehdy zvanou \u201ehouskov\u00e1 \u0161i\u0161ka\u201c, u\u00a0Paukert\u016f p\u0159e\u0161li b\u011bhem prvn\u00edho roku). Trochu p\u0159ekvapiv\u011b ne\u0161lo\u00a0o\u00a0klasickou kombinaci, kter\u00e9 se dnes \u0159\u00edk\u00e1 \u201ePaukert\u016fv chleb\u00ed\u010dek\u201c (m\u00e1slo, bramborov\u00fd sal\u00e1t, \u0161unka, tvrd\u00fd sal\u00e1m, va\u0159en\u00e9 vejce, okurka), ale o\u00a0pomaz\u00e1nku z\u00a0ryb\u00edch zbytk\u016f se sardelov\u00fdm o\u010dkem.<\/p>\r\n<p>Mlsn\u00e9mu mal\u00ed\u0159i novinka chutnala, a\u00a0tak ji Paukert nab\u00eddl ve\u0159ejnosti a\u00a0v\u0161echno nasv\u011bd\u010duje tomu, \u017ee to byla trefa do \u010dern\u00e9ho. Gurm\u00e1nskou novinku zprvu p\u0159ibrzdila v\u00a0rozletu v\u00e1le\u010dn\u00e1 ekonomika, nedostatek mouky a\u00a0v\u00e1zan\u00e9 hospod\u00e1\u0159stv\u00ed, kter\u00e9 p\u0159etrvalo a\u017e do za\u010d\u00e1tku dvac\u00e1t\u00fdch let a\u00a0kv\u016fli n\u011bmu\u017e se chleb\u00ed\u010dky n\u011bjakou dobu nesm\u011bly vyr\u00e1b\u011bt. P\u0159esto si Paukertovo lah\u016fdk\u00e1\u0159stv\u00ed a\u00a0jeho oblo\u017een\u00e9 chleb\u00ed\u010dky brzy obl\u00edbila pra\u017esk\u00e1 smet\u00e1nka. Svou roli ur\u010dit\u011b sehr\u00e1la i\u00a0bl\u00edzkost N\u00e1rodn\u00edho divadla a\u00a0Topi\u010dova nakladatelstv\u00ed. Nejen um\u011blci, ale i\u00a0politici\u00a0a\u00a0dal\u0161\u00ed p\u0159\u00edslu\u0161n\u00edci elit si tu pod\u00e1vali dve\u0159e po celou dobu trv\u00e1n\u00ed prvn\u00ed republiky, podnik se stal symbolem sv\u00e9 doby. U\u00a0Paukerta byli \u010dast\u00fdmi hosty Jaroslav Seifert, Jan Werich a\u00a0Ji\u0159\u00ed Voskovec, Ema Destinnov\u00e1, Hugo Haas i\u00a0L\u00edda Baarov\u00e1. Vlasta Burian miloval oblo\u017een\u00e9 chleb\u00ed\u010dky natolik, \u017ee u\u00a0Paukerta po\u0159\u00e1dal chleb\u00ed\u010dkov\u00e9 d\u00fdch\u00e1nky pro sv\u00e9 p\u0159\u00e1tele.<\/p>\r\n<p>Pozadu samoz\u0159ejm\u011b nez\u016fstala ani konkurence\u00a0\u2013 obdobn\u00e9 chleb\u00ed\u010dky za\u010dali nab\u00edzet i\u00a0dal\u0161\u00ed p\u0159edn\u00ed pra\u017e\u0161t\u00ed lah\u016fdk\u00e1\u0159i, tedy p\u0159edev\u0161\u00edm hlavn\u00ed Paukert\u016fv konkurent, podnik N\u011bmce Josefa Lipperta, d\u00e1le Zoufal\u00fd na Zlat\u00e9m k\u0159\u00ed\u017ei, Linka v\u00a0Havl\u00ed\u010dkov\u011b ulici a\u00a0potom dal\u0161\u00ed a\u00a0dal\u0161\u00ed. U\u017e v\u00a0druh\u00e9 polovin\u011b 20.&nbsp;let byly oblo\u017een\u00e9 chleb\u00ed\u010dky obl\u00edben\u00fdm ob\u010derstven\u00edm, kter\u00e9 bylo k\u00a0dost\u00e1n\u00ed skoro kdekoliv\u00a0\u2013 a\u00a0u\u017e tehdy byly probl\u00e9my s\u00a0jejich \u010derstvost\u00ed, respektive kr\u00e1tkou trvanlivost\u00ed, jak dokl\u00e1d\u00e1 i\u00a0n\u00e1sleduj\u00edc\u00ed anekdota z\u00a0rubriky Trochu humoru den\u00edku Venkov z\u00a029.\u00a0kv\u011btna\u00a01927: \u201eZ\u00a0p\u0159edn\u00e1\u0161ky o\u00a0kucha\u0159sk\u00e9m um\u011bn\u00ed: Oblo\u017een\u00e9 chleb\u00ed\u010dky s\u00a0m\u00e1slem byly vynalezeny poprve v\u00a0osmn\u00e1ct\u00e9m stolet\u00ed. Je\u0161t\u011b dnes je nalezneme vystaveny na ka\u017ed\u00e9m n\u00e1dra\u017e\u00ed ve sklen\u011bn\u00fdch sk\u0159\u00ed\u0148k\u00e1ch.\u201c V\u00a0roce 1935, kdy kon\u010dila velk\u00e1 hospod\u00e1\u0159sk\u00e1 krize, psaly N\u00e1rodn\u00ed listy v\u00a0\u010dl\u00e1nku v\u011bnovan\u00e9m lidov\u00e9mu podnik\u00e1n\u00ed o\u00a0rodin\u00e1ch vyr\u00e1b\u011bj\u00edc\u00edch oblo\u017een\u00e9 chleb\u00ed\u010dky ve velk\u00e9m a\u00a0konstatuj\u00ed: \u201ePracuj\u00ed v\u00fdlu\u010dn\u011b pro jednotkov\u00e9 obchody (dnes bychom \u0159ekli diskonty\u00a0\u2013 pozn. aut.) a\u00a0vede se jim velmi dob\u0159e.\u201c A\u00a0v\u00a0roce 1938 ministerstvo obchodu pova\u017eovalo za nutn\u00e9 upravit obchod oblo\u017een\u00fdmi chleb\u00ed\u010dky tak, aby obchodn\u00edci se sm\u00ed\u0161en\u00fdm zbo\u017e\u00edm sm\u011bli prod\u00e1vat pouze chleb\u00ed\u010dky zabalen\u00e9 a\u00a0zakoupen\u00e9 od \u0159\u00e1dn\u00e9ho v\u00fdrobce s\u00a0p\u0159\u00edslu\u0161nou konces\u00ed, nesm\u011bli je sami vyr\u00e1b\u011bt.<\/p>\r\n<p><a href=\"https:\/\/www.praha7.cz\/chlebicek-nas-vezdejsi\/chlebicky_kydanec\/\" rel=\"attachment wp-att-52586\"><img loading=\"lazy\" src=\"https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/11\/chlebicky_kydanec.jpg\" alt=\"\" width=\"1264\" height=\"1689\" class=\"alignnone wp-image-52586 size-full\" srcset=\"https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/11\/chlebicky_kydanec.jpg 1264w, https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/11\/chlebicky_kydanec-299x400.jpg 299w, https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/11\/chlebicky_kydanec-768x1026.jpg 768w, https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/11\/chlebicky_kydanec-748x1000.jpg 748w\" sizes=\"(max-width: 1264px) 100vw, 1264px\" \/><\/a><\/p>\r\n<p><strong>\u00daloha chleb\u00ed\u010dk\u016f v\u00a0d\u011bjin\u00e1ch<\/strong><br \/>\r\nVzhledem k\u00a0oblib\u011b, kterou si chleb\u00ed\u010dky z\u00edskaly mezi pra\u017eskou honorac\u00ed, nen\u00ed \u00fapln\u011b p\u0159ekvapiv\u00e9, \u017ee sehr\u00e1ly ur\u010ditou roli tak\u00e9 ve dvou politick\u00fdch kauz\u00e1ch t\u00e9 doby. Prvn\u00ed z\u00a0nich je dnes u\u017e skoro zapomenut\u00e1, ale ve sv\u00e9 dob\u011b ve\u0159ejnost\u00ed pozorn\u011b sledovan\u00e1 \u00faplatk\u00e1\u0159sk\u00e1 af\u00e9ra Ji\u0159\u00edho St\u0159\u00edbrn\u00e9ho na za\u010d\u00e1tku 30.&nbsp;let. St\u0159\u00edbrn\u00fd, \u010dlen n\u011bkolika prvorepublikov\u00fdch vl\u00e1d a\u00a0nejkontroverzn\u011bj\u0161\u00ed z\u00a0mu\u017e\u016f 28.\u00a0\u0159\u00edjna\u00a01918, byl na\u0159\u010den, \u017ee jako ministr \u017eeleznic objednal n\u00e1kup vagon\u016f\u00a0v\u00a0N\u011bmecku a\u00a0dostal za to slu\u0161nou provizi vyjednanou jist\u00fdm hodin\u00e1\u0159em Franti\u0161kem Sichrovsk\u00fdm. St\u0159\u00edbrn\u00fd i\u00a0Sichrovsk\u00fd pod p\u0159\u00edsahou pop\u0159eli, \u017ee by se znali, a\u00a0kdy\u017e vy\u0161el najevo opak, byli v\u00a0roce 1931 obvin\u011bni z\u00a0k\u0159ivop\u0159\u00edse\u017enictv\u00ed. V\u00a0procesu p\u0159ed jihlavsk\u00fdm soudem pak jako sv\u011bdek ob\u017ealoby vypov\u00eddal p\u0159\u00edru\u010d\u00ed Jaroslav Fr\u00edda, kter\u00fd kolem roku 1920 pracoval v\u00a0Paukertov\u011b lah\u016fdk\u00e1\u0159stv\u00ed, \u017ee v\u00a0t\u00e9 dob\u011b vid\u011bl Sichrovsk\u00e9ho, jen\u017e si zde pravideln\u011b pochutn\u00e1val na chleb\u00ed\u010dk\u00e1ch a\u00a0v\u00ednu, mluvit s\u00a0ministrem St\u0159\u00edbrn\u00fdm v\u00a0zadn\u00ed m\u00edstnosti obchodu.<\/p>\r\n<p>V\u00a0procesu, kter\u00fd skon\u010dil osvobozuj\u00edc\u00edm rozsudkem pro oba ob\u017ealovan\u00e9, vystupovali jako sv\u011bdci tak\u00e9 Jan Paukert, \u0160t\u011bp\u00e1nka Paukertov\u00e1 a\u00a0dal\u0161\u00ed zam\u011bstnanci lah\u016fdk\u00e1\u0159stv\u00ed. Tehdej\u0161\u00ed tisk v\u00a0report\u00e1\u017e\u00edch z\u00a0procesu detailn\u011b l\u00ed\u010dil dohady sv\u011bdk\u016f o\u00a0podrobnostech, na nich\u017e se obh\u00e1jci sna\u017eili zpochybnit v\u011brohodnost Fr\u00eddova sv\u011bdectv\u00ed o\u00a0deset let star\u00fdch ud\u00e1lostech\u00a0\u2013 jak tehdy vypadalo vybaven\u00ed m\u00edstnosti, kter\u00e1 celebrita chodila do podniku v\u00a0jakou dobu, jestli se v\u00a0t\u00e9 dob\u011b v\u016fbec chleb\u00ed\u010dky prod\u00e1valy, jestli Fr\u00edda mohl vzhledem ke sv\u00fdm pracovn\u00edm povinnostem ob\u017ealovan\u00e9 potkat,\u00a0a\u00a0podobn\u011b. Z\u00a0\u010detn\u00fdch refer\u00e1t\u016f ze soudn\u00ed s\u00edn\u011b si autor tohoto \u010dl\u00e1nku obl\u00edbil zejm\u00e9na n\u00e1sleduj\u00edc\u00ed pas\u00e1\u017e z\u00a0Lidov\u00fdch novin z\u00a012.\u00a0\u0159\u00edjna\u00a01932: \u201e[St\u0159\u00edbrn\u00fd] Sichrovsk\u00e9ho skute\u010dn\u011b vid\u011bl v\u00a0Paukertov\u011b lah\u016fdk\u00e1\u0159stv\u00ed a\u00a0zapamatoval si ho, proto\u017ee pr\u00fd Sichrovsk\u00fd vedle sklenky sherry a\u00a0oblo\u017een\u00fdch chleb\u00ed\u010dk\u016f vypadal tak spokojen\u011b, \u017ee byl jako reklama pro lah\u016fdk\u00e1\u0159e (vesel\u00ed). Nemluvil s\u00a0n\u00edm v\u0161ak.\u201c<\/p>\r\n<p>Druh\u00e1, zn\u00e1m\u011bj\u0161\u00ed kauza, pro kterou se ujalo ozna\u010den\u00ed \u201echleb\u00ed\u010dkov\u00e1 af\u00e9ra\u201c, u\u017e spad\u00e1 do let nacistick\u00e9 okupace. Dne 18.\u00a0z\u00e1\u0159\u00ed\u00a01941 se t\u0159i novin\u00e1\u0159i aktivn\u011b spolupracuj\u00edc\u00ed s\u00a0okupa\u010dn\u00edm re\u017eimem otr\u00e1vili chleb\u00ed\u010dky, je\u017e dostali jako ob\u010derstven\u00ed b\u011bhem setk\u00e1n\u00ed s\u00a0p\u0159edsedou protektor\u00e1tn\u00ed vl\u00e1dy Aloisem Eli\u00e1\u0161em. Jeden z\u00a0nich, \u0161\u00e9fredaktor \u010cesk\u00e9ho slova Karel La\u017enovsk\u00fd, 10.\u00a0\u0159\u00edjna zem\u0159el a\u00a0pitva prok\u00e1zala, \u017ee p\u0159\u00ed\u010dinou jeho smrti byl b\u0159i\u0161n\u00ed tyfus. Premi\u00e9r Eli\u00e1\u0161 byl mezit\u00edm po\u00a0n\u00e1stupu Reinharda Heydricha do funkce zastupuj\u00edc\u00edho \u0159\u00ed\u0161sk\u00e9ho protektora zat\u010den a\u00a0obvin\u011bn ze spolupr\u00e1ce s\u00a0odbojem a\u00a0po smrti La\u017enovsk\u00e9ho byl vysl\u00fdch\u00e1n i\u00a0kv\u016fli podez\u0159en\u00ed z\u00a0travi\u010dstv\u00ed. Eli\u00e1\u0161 v\u0161ak jakoukoliv spojitost s\u00a0otravami pop\u00edral a\u00a0mo\u017enost jeho zapojen\u00ed odm\u00edtla i\u00a0n\u011bmeck\u00e1 vy\u0161et\u0159ovac\u00ed komise. P\u0159esto se po v\u00e1lce objevily teorie, \u017ee Eli\u00e1\u0161 nechal chleb\u00ed\u010dky pro kolaborantsk\u00e9 novin\u00e1\u0159e otr\u00e1vit\u00a0a\u00a0pomohli mu v\u00a0tom jeho p\u0159\u00e1tel\u00e9, l\u00e9ka\u0159i a\u00a0bakteriologov\u00e9, kte\u0159\u00ed mu opat\u0159ili botulotoxin a\u00a0bakterie tyfu a\u00a0tuberkul\u00f3zy. Alois Eli\u00e1\u0161 byl 19.\u00a0\u010dervna\u00a01942 za svou odbojovou \u010dinnost popraven na Kobylisk\u00e9 st\u0159elnici a\u00a0o\u00a0jeho skute\u010dn\u00e9 roli v\u00a0\u201echleb\u00ed\u010dkov\u00e9 af\u00e9\u0159e\u201c vedou historici spory dodnes.<\/p>\r\n<p>I\u00a0po v\u00e1lce v\u0161ak pra\u017e\u0161t\u00ed lah\u016fdk\u00e1\u0159i za\u017e\u00edvali t\u011b\u017ek\u00e9 \u010dasy\u00a0\u2013 podniky pat\u0159\u00edc\u00ed N\u011bmc\u016fm \u010dekala konfiskace, ty \u010desk\u00e9 nedlouho pot\u00e9 zn\u00e1rodn\u011bn\u00ed. V\u00a0testu byly nejl\u00e9pe hodnoceny vzorky z\u00a0Chleb\u00ed\u010dk\u016f Letn\u00e1 na Milady Hor\u00e1kov\u00e9 42; jejich hodnocen\u00ed lapid\u00e1rn\u011b \u0159\u00edk\u00e1 \u201eNejlep\u0161\u00ed chleb\u00ed\u010dky\u201c. T\u0159et\u00ed m\u00edsto pak obsadily vzorky z\u00a0dal\u0161\u00edho lah\u016fdk\u00e1\u0159stv\u00ed na Sedmi\u010dce\u00a0\u2013\u00a0Libe\u0159sk\u00fdch lah\u016fdek na Dukelsk\u00fdch hrdin\u016f\u00a033.<\/p>\r\n<p>Z\u0159ejm\u011b ne\u0161lo jen o\u00a0n\u00e1hodu nebo osobn\u00ed preferenci poroty\u00a0\u2013 podobn\u00fd test publikovaly u\u017e v\u00a0dubnu 2011 Lidov\u00e9 noviny. I\u00a0tehdy byly\u00a0chleb\u00ed\u010dky koupen\u00e9 na adrese Milady Hor\u00e1kov\u00e9\u00a042 (prodejna tehdy nesla n\u00e1zev B+B Lah\u016fdky Letn\u00e1) vyhodnoceny jako nejlep\u0161\u00ed ze v\u0161ech testovan\u00fdch, o\u00a0tenk\u00fd pl\u00e1tek uzen\u00fdch kachn\u00edch prsou p\u0159ed t\u011bmi z\u00a0Libe\u0159sk\u00fdch lah\u016fdek. Oba letensk\u00e9 podniky p\u0159itom v\u00a0hodnocen\u00ed\u00a0porazily tehdy je\u0161t\u011b funguj\u00edc\u00ed znovuobnoven\u00e9 Lah\u016fdk\u00e1\u0159stv\u00ed Paukert na N\u00e1rodn\u00ed t\u0159\u00edd\u011b (jeho pop\u0159evratov\u00fd restart smutn\u011b skon\u010dil v\u00a0roce 2015 uzav\u0159en\u00edm provozovny potravin\u00e1\u0159skou inspekc\u00ed kv\u016fli p\u0159\u00edtomnosti my\u0161\u00ed a\u00a0n\u00e1sledn\u00fdm vyhl\u00e1\u0161en\u00edm \u00fapadku).<\/p>\r\n<p>Ob\u011b oce\u0148ovan\u00e1 letensk\u00e1 lah\u016fdk\u00e1\u0159stv\u00ed maj\u00ed sv\u00e9 skaln\u00ed p\u0159\u00edznivce, kte\u0159\u00ed jsou naprosto pevn\u011b p\u0159esv\u011bd\u010deni, \u017ee chleb\u00ed\u010dky z\u00a0\u201ejejich\u201c prodejny jsou lep\u0161\u00ed ne\u017e ty z\u00a0konkuren\u010dn\u00ed. P\u0159i bli\u017e\u0161\u00edm pohledu se ov\u0161em zd\u00e1, \u017ee linie d\u011bl\u00edc\u00ed oba t\u00e1bory je n\u00e1padn\u011b podobn\u00e1\u00a0linii sp\u00e1dovosti\u00a0\u2013 prost\u011b kdo to m\u00e1 bl\u00ed\u017e do \u201eLibe\u0159sk\u00fdch\u201c, d\u00e1v\u00e1 jim p\u0159ednost p\u0159ed Chleb\u00ed\u010dky Letn\u00e1 a\u00a0opa\u010dn\u011b. Jak je to ale doopravdy? Proto\u017ee od testu v\u00a0MF Dnes ub\u011bhlo u\u017e \u0161est let, co\u017e je v\u00a0gastronomii stra\u0161n\u011b dlouh\u00e1 doba, rozhodli jsme se pod\u00edvat se v\u011bci na zoubek v\u00a0na\u0161em vlastn\u00edm redak\u010dn\u00edm slep\u00e9m testu.<\/p>\r\n<p>Do testu jsme krom\u011b produkt\u016f dvou zmi\u0148ovan\u00fdch lah\u016fdk\u00e1\u0159stv\u00ed cht\u011bli jako \u201e\u010dern\u00e9ho kon\u011b\u201c za\u0159adit tak\u00e9 chleb\u00ed\u010dky z\u00a0bistra Lahoodky na rohu Komunard\u016f a\u00a0D\u011blnick\u00e9. To se ale ze sout\u011b\u017ee diskvalifikovalo t\u00edm, \u017ee na uveden\u00e9 adrese u\u017e nep\u016fsob\u00ed (a\u00a0autor \u010dl\u00e1nku p\u0159izn\u00e1v\u00e1, \u017ee to zjistil a\u017e p\u016fl hodiny p\u0159ed za\u010d\u00e1tkem testu). V\u0161e nasv\u011bd\u010duje tomu, \u017ee na v\u00fdchod od trati na Sedmi\u010dce moment\u00e1ln\u011b nen\u00ed lah\u016fdk\u00e1\u0159stv\u00ed, kter\u00e9 by si vyr\u00e1b\u011blo vlastn\u00ed chleb\u00ed\u010dky, a\u00a0srovn\u00e1vat chleb\u00ed\u010dky vyroben\u00e9 \u201ena m\u00edst\u011b\u201c s\u00a0t\u011bmi odn\u011bkud dovezen\u00fdmi by asi nem\u011blo velkou v\u00fdpov\u011bdn\u00ed hodnotu. Proto test nakonec prob\u011bhl jako duel dvou letensk\u00fdch podnik\u016f.<\/p>\r\n<p>V\u00a0na\u0161\u00ed laick\u00e9\u00a0porot\u011b zasedli dva mu\u017ei a\u00a0dv\u011b \u017eeny: Jind\u0159ich \u0160\u00eddlo, koment\u00e1tor Seznam Zpr\u00e1vy; Kl\u00e1ra Cibulkov\u00e1, here\u010dka; Jaroslav Pavli\u0161\u00edn, v\u00fd\u010depn\u00ed restaurace Na Pra\u0161ivce; a\u00a0Natalie Koll\u00e1rikov\u00e1, \u0161\u00e9fredaktorka Hobuletu (nahradila Ivu Jake\u0161ovou, provozovatelku Bistra 8, kter\u00e1 bohu\u017eel v\u00a0den testu onemocn\u011bla). Porotci ochutn\u00e1vali a\u00a0posuzovali po dvou vzorc\u00edch chleb\u00ed\u010dk\u016f z\u00a0obou lah\u016fdk\u00e1\u0159stv\u00ed. Ty byly zakoupeny a\u00a0dopraveny na radnici Prahy&nbsp;7, kde test prob\u00edhal, zhruba p\u016fl hodiny p\u0159ed jeho za\u010d\u00e1tkem. Jako vzorky jsme zvolili v\u017edy jeden \u0161unkov\u00fd chleb\u00ed\u010dek s\u00a0bramborov\u00fdm sal\u00e1tem a\u00a0jeden s\u00a0tvrd\u00fdm sal\u00e1mem. Na z\u00e1klad\u011b celkov\u00e9ho dojmu z\u00a0obou ochutnan\u00fdch vzork\u016f pak porotci hodnotili lah\u016fdk\u00e1\u0159stv\u00ed, ozna\u010den\u00e1 v\u00a0testu pouze jako A\u00a0a\u00a0B, na stupnici 1 a\u017e 10 bod\u016f.<\/p>\r\n<p>Test chleb\u00ed\u010dk\u016f prob\u011bhl p\u0159\u00edzna\u010dn\u011b v\u00a0den, kdy se za\u010daly hledat chleb\u00ed\u010dky za sto tis\u00edc korun, kter\u00e9, jak den p\u0159edt\u00edm odhalila m\u00e9dia, z\u00e1hadn\u011b zmizely p\u0159i z\u00e1\u0159ijov\u00e9 n\u00e1v\u0161t\u011bv\u011b ma\u010farsk\u00e9ho premi\u00e9ra Orb\u00e1na v\u00a0\u00dasteck\u00e9m kraji. Jestli kauza p\u0159erostla do rozm\u011br\u016f protektor\u00e1tn\u00ed chleb\u00ed\u010dkov\u00e9 af\u00e9ry, nebylo v\u00a0dob\u011b uz\u00e1v\u011brky tohoto \u010d\u00edsla Hobuletu zn\u00e1mo.<\/p>\r\n<p>&nbsp;<\/p>\r\n<p><strong>Chleb\u00ed\u010dky Letn\u00e1<\/strong><br \/>\r\n<strong>(Milady Hor\u00e1kov\u00e9 42)\u00a0\u2013 28 bod\u016f<\/strong><\/p>\r\n<p>U\u00a0\u0161unkov\u00e9ho chleb\u00ed\u010dku v\u0161em porotc\u016fm chutnal pou\u017eit\u00fd bramborov\u00fd sal\u00e1t, kter\u00fd hodnotili jako m\u00edrn\u011b lep\u0161\u00ed ne\u017e na vzorku od konkurence. Jaroslav Pavli\u0161\u00edn ocenil, \u017ee neobsahoval hr\u00e1\u0161ek (p\u0159edes\u00edl\u00e1me, \u017ee hr\u00e1\u0161ek nebyl ani v\u00a0bramborov\u00e9m sal\u00e1tu pou\u017eit\u00e9m Libe\u0159sk\u00fdmi lah\u016fdkami), a\u00a0zd\u016fraznil, \u017ee bramborov\u00fd sal\u00e1t je ze sal\u00e1t\u016f s\u00a0majon\u00e9zou jedin\u00fd, do kter\u00e9ho hr\u00e1\u0161ek podle tradi\u010dn\u00ed receptury nepat\u0159\u00ed, a\u010dkoliv ho do n\u011bj mnoho lid\u00ed p\u0159id\u00e1v\u00e1. Po nahl\u00e9dnut\u00ed do kucha\u0159ky Mistra Vrabce citovan\u00e9\u00a0v\u00a0\u00favodu \u010dl\u00e1nku d\u00e1v\u00e1 jeho autor panu Pavli\u0161\u00ednovi za pravdu, a\u010dkoliv si je v\u011bdom, \u017ee toto t\u00e9ma m\u016f\u017ee u\u00a0\u010dten\u00e1\u0159\u016f vyvolat p\u0159e stejn\u011b v\u00e1\u0161niv\u00e9 jako ot\u00e1zka, kde maj\u00ed lep\u0161\u00ed chleb\u00ed\u010dky. K\u00a0\u0161unce nem\u011bli porotci \u017e\u00e1dn\u00e9 v\u00fdhrady, stejn\u011b jako k\u00a0vaj\u00ed\u010dku; to op\u011bt plat\u00ed pro vzorky z\u00a0obou lah\u016fdk\u00e1\u0159stv\u00ed.<\/p>\r\n<p>Sal\u00e1mov\u00fd chleb\u00ed\u010dek v\u00a0pod\u00e1n\u00ed Chleb\u00ed\u010dk\u016f Letn\u00e1 obsahoval uhersk\u00fd sal\u00e1m. V\u011bt\u0161ina porotc\u016f mu d\u00e1vala p\u0159ednost p\u0159ed konkuren\u010dn\u00ed verz\u00ed s\u00a0n\u011bmeck\u00fdm sal\u00e1mem Gurm\u00e1n v\u00a0parmaz\u00e1nov\u00e9 krust\u011b, co\u017e Jaroslav Pavli\u0161\u00edn lapid\u00e1rn\u011b shrnul slovy: \u201eUher\u00e1k je uher\u00e1k.\u201c Natalie Koll\u00e1rikov\u00e1 ale upozornila na \u0161patn\u011b rozet\u0159en\u00e9 m\u00e1slo\u00a0\u2013 u\u00a0kraj\u016f z\u016fstal jej\u00ed chleb\u00ed\u010dek v\u00a0n\u011bkter\u00fdch m\u00edstech \u00fapln\u011b such\u00fd. Tato pomaz\u00e1nka\u00a0velmi chutnala p\u0159edev\u0161\u00edm ob\u011bma d\u00e1m\u00e1m, a\u010dkoliv tak\u00e9 v\u00a0tomto p\u0159\u00edpad\u011b nebyla Natalie Koll\u00e1rikov\u00e1 \u00fapln\u011b spokojena s\u00a0rozet\u0159en\u00edm na vece, kter\u00e9 nebylo stejnom\u011brn\u00e9. Na \u010dem se porotci neshodli, bylo hodnocen\u00ed pou\u017eit\u00e9 veky\u00a0\u2013 ta z\u00a0Libe\u0159sk\u00fdch lah\u016fdek chutnala l\u00e9pe Kl\u00e1\u0159e Cibulkov\u00e9 a\u00a0Jind\u0159ichu \u0160\u00eddlovi (podle kter\u00e9ho nejen l\u00e9pe chutnala, ale i\u00a0l\u00e9pe vypadala), zat\u00edmco Natalie Koll\u00e1rikov\u00e1\u00a0a\u00a0Jaroslav Pavli\u0161\u00edn l\u00e9pe hodnotili tu z\u00a0Chleb\u00ed\u010dk\u016f Letn\u00e1. V\u00a0tomto ohledu n\u00e1\u0161 laick\u00fd test potvrdil star\u0161\u00ed verdikty odborn\u00edk\u016f v\u00a0MF Dnes a\u00a0Lidov\u00fdch novin\u00e1ch.
