Jedna z\u00a0prvn\u00edch staveb doln\u00edch Hole\u0161ovic, kter\u00e1 koncem 19.&nbsp;stolet\u00ed vznikla uprost\u0159ed pol\u00ed, byla pr\u00e1v\u011b novostavba hole\u0161ovick\u00e9ho pivovaru. A\u017e kolem n\u00ed se rozv\u00edjela dal\u0161\u00ed z\u00e1stavba. V\u00a0roce 1998 byl provoz pivovaru ukon\u010den a\u00a0historie komer\u010dn\u00edho va\u0159en\u00ed piva na Sedmi\u010dce se na\u010das uzav\u0159ela \u2013 aby se znovu otev\u0159ela v\u00a0jin\u00e9, mo\u017en\u00e1 i\u00a0zaj\u00edmav\u011bj\u0161\u00ed podob\u011b.<\/p>\r\n<p>[\/perex]<\/p>\r\n<p>Z\u00a0toho, co v\u00edme o\u00a0obecn\u00e9 historii va\u0159en\u00ed piva (viz box), vypl\u00fdv\u00e1, \u017ee na \u00fazem\u00ed Prahy&nbsp;7 se pivo va\u0159ilo pravd\u011bpodobn\u011b ji\u017e od st\u0159edov\u011bku, ale prvn\u00edm pivovarem, o\u00a0kter\u00e9m se dochovaly zm\u00ednky, je a\u017e Bubensk\u00fd pivovar. Ten st\u00e1val na m\u00edst\u011b nyn\u011bj\u0161\u00edho n\u00e1jezdu na magistr\u00e1lu, mezi dne\u0161n\u00edm p\u0159edmost\u00edm Hl\u00e1vkova mostu a\u00a0budovou b\u00fdval\u00e9 \u00darazov\u00e9 poji\u0161\u0165ovny d\u011blnick\u00e9. Mladinov\u00e1 p\u00e1nev (n\u00e1doba, ve kter\u00e9 se va\u0159\u00ed sladina s\u00a0chmelem) s\u00a0vyryt\u00fdm letopo\u010dtem 1649 je nejstar\u0161\u00ed doklad zdej\u0161\u00edho va\u0159en\u00ed piva, je v\u0161ak velmi pravd\u011bpodobn\u00e9, \u017ee tu bylo provozov\u00e1no u\u017e d\u00e1vno p\u0159edt\u00edm. Pivovar ukon\u010dil provoz v\u00a0roce 1926. T\u00edm se uzav\u0159ela t\u0159\u00edsetlet\u00e1 (by\u0165 ne nep\u0159eru\u0161en\u00e1) epocha, kdy se ve star\u00fdch Bubnech va\u0159ilo pivo. V\u00a0dob\u00e1ch nejv\u011bt\u0161\u00ed sl\u00e1vy, na p\u0159elomu devaten\u00e1ct\u00e9ho a\u00a0dvac\u00e1t\u00e9ho stolet\u00ed, podnik disponoval divadeln\u00edm s\u00e1lem, zahradou s\u00a0ku\u017eeln\u00edkem a\u00a0tak\u00e9 st\u00e1lou a\u00a0po\u010detnou klientelou, kter\u00e1 vypila cel\u00fd v\u00fdstav (ro\u010dn\u00ed produkci) \u010din\u00edc\u00ed 4500 hektolitr\u016f. Budova byla zbour\u00e1na v\u00a0roce 1957 p\u0159i \u00faprav\u00e1ch p\u0159edmost\u00ed.<\/p>\r\n<p>V\u00fdrazn\u011b mlad\u0161\u00ed, ale v\u00fdrazn\u011b zn\u00e1m\u011bj\u0161\u00ed hole\u0161ovick\u00fd pivovar, spr\u00e1vn\u011b Prvn\u00ed pra\u017esk\u00fd m\u011b\u0161\u0165ansk\u00fd pivovar, vznikl z\u00a0iniciativy veden\u00ed radnice v\u00a0roce 1895 a\u00a0prvn\u00ed pivo tu uva\u0159ili v\u00a0b\u0159eznu 1897. Do konce roku \u010dinil objem v\u00fdroby p\u0159es 56 tis\u00edc hektolitr\u016f piva, o\u00a0patn\u00e1ct let pozd\u011bji byl v\u00fdstav u\u017e trojn\u00e1sobn\u00fd. Spojen\u00ed m\u00faz a\u00a0piva je siln\u00e9 a\u00a0odv\u011bk\u00e9, tak\u017ee i\u00a0v\u00a0hole\u0161ovick\u00e9m pivovaru, podobn\u011b jako v\u00a0bubensk\u00e9m, se nach\u00e1zelo divadlo, dodnes zn\u00e1m\u00e1 Uranie. D\u0159ev\u011bn\u00e1 budova sem byla p\u0159em\u00edst\u011bna z\u00a0V\u00fdstavi\u0161t\u011b v\u00a0roce 1902, o\u00a044 let pozd\u011bji ale vyho\u0159ela. Po krizi po prvn\u00ed sv\u011btov\u00e9 v\u00e1lce se pivovar zm\u00e1to\u0159il a\u00a0brzy pat\u0159il k\u00a0tuzemsk\u00e9 technologick\u00e9 \u0161pi\u010dce.<\/p>\r\n<p>Obdob\u00ed rozmachu skon\u010dilo s\u00a0p\u0159\u00edchodem druh\u00e9 sv\u011btov\u00e9 v\u00e1lky, na jej\u00edm\u017e konci se pivovar nach\u00e1zel ve velmi \u0161patn\u00e9m stavu. Po zn\u00e1rodn\u011bn\u00ed byl slou\u010den do spole\u010dn\u00e9ho\u00a0podniku Pra\u017esk\u00e9 pivovary, n\u00e1rodn\u00ed podnik (s&nbsp;pivovary\u00a0sm\u00edchovsk\u00fdm, branick\u00fdm, nuselsk\u00fdm, pivovarem\u00a0u\u00a0Flek\u016f a\u00a0U\u00a0sv. Tom\u00e1\u0161e), a\u00a0p\u0159ejmenov\u00e1n na \u201ez\u00e1vod Hole\u0161ovice\u201c. V\u00fdstav se zvy\u0161oval, ov\u0161em kvalita piva klesala, mimo jin\u00e9 vlivem instalace st\u00e1\u010d\u00edrny nealkoholick\u00fdch n\u00e1poj\u016f v\u00a0bezprost\u0159edn\u00ed bl\u00edzkosti spilek (otev\u0159en\u00fdch k\u00e1d\u00ed, ve kter\u00fdch kvas\u00ed pivo) a\u00a0sklep\u016f. Va\u0159ila se hlavn\u011b sv\u011btl\u00e1 v\u00fd\u010depn\u00ed des\u00edtka (Pra\u017ean) a\u00a0dvan\u00e1ctistup\u0148ov\u00fd le\u017e\u00e1k (rovn\u011b\u017e pojmenovan\u00fd Pra\u017ean, pozd\u011bji Pragovar). Sortiment ob\u010das dopl\u0148ovalo tmav\u00e9 karamelov\u00e9 pivo Pra\u017eanka (pozd\u011bji M\u011b\u0161\u0165an).<\/p>\r\n<p>Pam\u011btn\u00edci \u201epozdn\u011b socialistick\u00e9ho\u201c pra\u017eanu jsou st\u00e1le mezi n\u00e1mi. Je t\u011b\u017ek\u00e9 s\u00a0odstupem n\u011bkolika dek\u00e1d hodnotit kvalitu piva a\u00a0srovn\u00e1vat je s\u00a0jin\u00fdmi tehdy dostupn\u00fdmi zna\u010dkami, ale jist\u00e9 je, \u017ee hole\u0161ovick\u00e9 pivo bylo i\u00a0na neradostn\u00e9 pom\u011bry tehdej\u0161\u00ed pivn\u00ed nab\u00eddky dost mizern\u00e9. Distribuce v\u0161ak byla pevn\u011b dan\u00e1 centr\u00e1ln\u00edm pl\u00e1nov\u00e1n\u00edm, a\u00a0tak hole\u0161ovick\u00e1 des\u00edtka v\u00a0m\u00edstn\u00edch restaurac\u00edch nejni\u017e\u0161\u00ed cenov\u00e9 skupiny naprosto p\u0159eva\u017eovala a\u00a0\u010dasto ji d\u00e1l zhor\u0161ovala nep\u0159\u00edli\u0161 velk\u00e1 snaha person\u00e1lu o\u00a0spr\u00e1vn\u00e9 zach\u00e1zen\u00ed s\u00a0pivem a\u00a0o\u00a0udr\u017eov\u00e1n\u00ed \u010distoty v\u00fd\u010depn\u00edho za\u0159\u00edzen\u00ed. V\u00a0m\u00edstn\u00edch obchodech se v\u00a0osmdes\u00e1t\u00fdch letech zpravidla prod\u00e1vala v\u00a0lahv\u00edch bez etiket, informace pro spot\u0159ebitele byly vy\u0159e\u0161eny lakonick\u00fdm n\u00e1pisem \u201ePra\u017ean 10 %\u201c vyra\u017een\u00fdm\u00a0v\u00a0kovov\u00e9 korunce. Nab\u00eddka jin\u00fdch v\u00fdrobc\u016f se v\u00a0t\u00e9to kategorii piva obvykle nekonala a\u00a0vyb\u00edrat si bylo mo\u017en\u00e9 nanejv\u00fd\u0161 mezi hn\u011bdou a\u00a0zelenou lahv\u00ed (podle r\u016fzn\u00fdch dobov\u00fdch m\u00fdt\u016f bylo pivo z\u00a0jednoho nebo druh\u00e9ho typu zaru\u010den\u011b lep\u0161\u00ed).<\/p>\r\n<p>Po roce 1989 pivovar o\u017eil, jako prvn\u00ed u\u00a0n\u00e1s zavedl nerezov\u00e9 sudy m\u00edsto do t\u00e9 doby pou\u017e\u00edvan\u00fdch hlin\u00edkov\u00fdch, kter\u00e9 s\u00a0pivem reagovaly a\u00a0degradovaly jeho chu\u0165. V\u00fdstav op\u011bt stoupal, tentokr\u00e1t ruku v\u00a0ruce s\u00a0kvalitou piva,\u00a0a\u00a0kdy\u017e v\u00a0roce 1996 dos\u00e1hl 420 tis\u00edc hektolitr\u016f, budoucnost se zd\u00e1la b\u00fdt skv\u011bl\u00e1. N\u011bkte\u0159\u00ed \u010dten\u00e1\u0159i budou je\u0161t\u011b z\u00a0t\u011bch let pamatovat reprezenta\u010dn\u00ed prodejnu \u201eve v\u00fdklenku\u201c na Letensk\u00e9m n\u00e1m\u011bst\u00ed, p\u0159izdobenou pozoruhodn\u00fdm sloganem \u201eMu\u017e\u016fm b\u0159\u00ed\u0161ko, \u017een\u00e1m tvar d\u011bl\u00e1 pivo Pragovar\u201c, kter\u00fd by dnes u\u017e \u017e\u00e1dn\u00fd marketingov\u00fd mana\u017eer nejsp\u00ed\u0161 nepou\u017eil. V\u00a0roce 1998 ale tehdej\u0161\u00ed vlastn\u00edk, britsk\u00e1 spole\u010dnost Bass, rozhodl o\u00a0ukon\u010den\u00ed v\u00fdroby a\u00a0jej\u00edm p\u0159esunut\u00ed do pivovaru Staropramen. Pou\u017eiteln\u00e9 za\u0159\u00edzen\u00ed bylo p\u0159evezeno na Sm\u00edchov a\u00a0do Bran\u00edka, \u0161koln\u00ed minipivovar, kter\u00fd se tu tak\u00e9 nach\u00e1zel, byl v\u011bnov\u00e1n pivovarnick\u00e9 \u0161kole v\u00a0Podskal\u00ed.\u00a0Z\u00a0budov se po p\u0159estavb\u011b staly byty, kancel\u00e1\u0159e\u00a0a\u00a0obchody.<\/p>\r\n<p><a href=\"https:\/\/www.praha7.cz\/z-historie-pivovarnictvi-na-sedmicce\/pivo1\/\" rel=\"attachment wp-att-49392\"><img loading=\"lazy\" src=\"https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/06\/pivo1-700x1000.jpg\" alt=\"\" width=\"640\" height=\"914\" class=\"alignnone wp-image-49392 size-large\" srcset=\"https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/06\/pivo1-700x1000.jpg 700w, https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/06\/pivo1-280x400.jpg 280w, https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/06\/pivo1-768x1098.jpg 768w, https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/06\/pivo1.jpg 1736w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\r\n<p><strong>Pivo nen\u00ed jen le\u017e\u00e1k<\/strong><br \/>\r\nV\u00a0dob\u011b, kdy hole\u0161ovick\u00fd pivovar zav\u0159el br\u00e1ny za posledn\u00ed v\u00e1rkou vyexpedovan\u00e9ho piva, ovl\u00e1daly \u010desk\u00fd trh st\u0159edn\u00ed a\u00a0velk\u00e9 pivovary s\u00a0jedin\u00fdm typem piva \u2013 sv\u011btl\u00fdm spodn\u011b kva\u0161en\u00fdm pivem plze\u0148sk\u00e9ho typu. To poprv\u00e9 uva\u0159il bavorsk\u00fd sl\u00e1dek Josef Groll v\u00a0roce 1842 v\u00a0Plzni a\u00a0v\u00a0n\u00e1sleduj\u00edc\u00edch dek\u00e1d\u00e1ch se j\u00edm \u010de\u0161t\u00ed pivovarn\u00edci proslavili v\u00a0cel\u00e9m sv\u011bt\u011b. Toto zlatav\u00e9 st\u0159edn\u011b chmelen\u00e9 \u010dir\u00e9 pivo s\u00a0v\u00fdrazn\u00fdm aromatem bylo v\u00a0na\u0161ich zem\u00edch dota\u017eeno k\u00a0dokonalosti a\u00a0z\u00a0m\u00edstn\u00edho trhu postupn\u011b vytla\u010dilo jin\u00e9 druhy piv. V\u00fdjimky jako nap\u0159\u00edklad Pardubick\u00fd Porter p\u0159e\u017e\u00edvaly coby margin\u00e1ln\u00ed kuriozity a\u00a0nap\u0159\u00edklad p\u0161eni\u010dn\u00e9 svrchn\u011b kva\u0161en\u00e9 pivo, kter\u00e9 kdysi v\u00a0na\u0161ich zem\u00edch p\u0159eva\u017eovalo, upadlo ve druh\u00e9 polovin\u011b 20.&nbsp;stolet\u00ed v\u00a0t\u00e9m\u011b\u0159 naprost\u00e9 zapomn\u011bn\u00ed. \u201e\u010cern\u00e9 pivo\u201c v\u00a0pov\u00e1le\u010dn\u00e9m \u010ceskoslovensku zase automaticky znamenalo \u201esladk\u00e9 pivo\u201c a\u00a0bylo v\u0161eobecn\u011b pova\u017eov\u00e1no za n\u00e1poj pro \u017eeny. \u010cesk\u00fd piva\u0159 si \u201esv\u00e9\u201c pivo zamiloval a\u00a0jin\u00e9 necht\u011bl ani pot\u00e9, co padla \u017eelezn\u00e1 opona a\u00a0bylo mo\u017en\u00e9 za\u010d\u00edt ochutn\u00e1vat jinde. Sklenic\u00ed bavorsk\u00e9 \u201ep\u0161enice\u201c se ujistil, \u017ee se bude dr\u017eet le\u017e\u00e1ku, obracel o\u010di v\u00a0sloup\u00a0a\u00a0mumlal slova o\u00a0kac\u00ed\u0159stv\u00ed, kdy\u017e vid\u011bl, jak v\u00a0Rakousku cyklov\u00fdletn\u00edci m\u00edchaj\u00ed pivo s\u00a0citronovou limon\u00e1dou. V\u00a0roce 1996 za\u010dal pivovar Gambrinus va\u0159it p\u0161eni\u010dn\u00e9 pivo pod n\u00e1zvem Gambrinus B\u00edl\u00fd \u2013 a\u00a0na \u010desk\u00e9m konzervativn\u00edm trhu s\u00a0n\u00edm tehdy \u00fapln\u011b poho\u0159el.<\/p>\r\n<p>Nezd\u00e1lo se, \u017ee by \u010ce\u0161i je\u0161t\u011b n\u011bkdy byli ochotni p\u0159ijmout n\u011bco jin\u00e9ho ne\u017e sv\u011btl\u00fd le\u017e\u00e1k, ale nakonec k\u00a0tomu p\u0159ece jen do\u0161lo. I\u00a0do \u010desk\u00e9 kotliny dorazila vlna z\u00e1jmu o\u00a0\u201e\u0159emesln\u00e9\u201c pivo. Ta paradoxn\u011b p\u0159i\u0161la ze zem\u011b naprost\u00e9ho pivn\u00edho \u00fapadku \u2013 Spojen\u00fdch st\u00e1t\u016f americk\u00fdch, kde trh ovl\u00e1dala (a\u00a0vlastn\u011b st\u00e1le ovl\u00e1daj\u00ed) \u0159\u00eddk\u00e1 slab\u00e1 piva nev\u00fdrazn\u00e9 chuti va\u0159en\u00e1 ve velkopivovarech n\u011bkolika koncern\u016f ze v\u0161eho mo\u017en\u00e9ho, v\u010detn\u011b r\u00fd\u017ee. V\u00a0tomto prost\u0159ed\u00ed na za\u010d\u00e1tku osmdes\u00e1t\u00fdch, ale je\u0161t\u011b v\u00fdrazn\u011bji v\u00a0druh\u00e9 polovin\u011b devades\u00e1t\u00fdch let minul\u00e9ho stolet\u00ed za\u010daly vznikat mikropivovary, obvykle kombinuj\u00edc\u00ed v\u00a0jedn\u00e9 budov\u011b v\u00fdrobu piva, pivovarskou restauraci a\u00a0nezbytn\u00fd prodej suven\u00fdr\u016f. Ty p\u0159inesly Ameri\u010dan\u016fm zp\u011bt to, co nap\u0159\u00edklad ze z\u00e1padn\u00ed \u010d\u00e1sti N\u011bmecka nikdy nezmizelo \u2013 mal\u00e9 lok\u00e1ln\u00ed pivovary, kter\u00e9 v\u0161e, co uva\u0159\u00ed, rychle prodaj\u00ed ve vlastn\u00edch podnic\u00edch nebo v\u00a0nejbli\u017e\u0161\u00edm okol\u00ed (v\u00a0\u010cesku u\u017e\u00edvan\u00fd v\u00fdraz zn\u00ed \u201ekolem kom\u00edna\u201c), tak\u017ee nemusej\u00ed sv\u00e9 pivo kv\u016fli p\u0159evozu na dlouh\u00e9 vzd\u00e1lenosti a\u00a0skladov\u00e1n\u00ed filtrovat a\u00a0pasterizovat. Mikro- a\u00a0minipivovarnictv\u00ed\u00a0v\u00a0Americe vytrvale rostlo. Z\u00e1jem se p\u0159es Velkou Brit\u00e1nii p\u0159elil i\u00a0do Evropy a\u00a0znovuobjeven\u00e1 rozmanitost pivn\u00edch styl\u016f a\u00a0chut\u00ed s\u00a0sebou p\u0159inesla i\u00a0nov\u011b vy\u0161lecht\u011bn\u00e9 chmely. Na p\u0159elomu prvn\u00ed a\u00a0druh\u00e9 dek\u00e1dy 21.&nbsp;stolet\u00ed si tato \u201enov\u00e1\u201c piva postupn\u011b znovu podmanila (snad bychom mohli \u0159\u00edci i\u00a0\u201euchv\u00e1tila\u201c) t\u00e9\u017e \u010cesko. Tak\u00e9 v\u00a0Praze 7 se objevily prvn\u00ed pivot\u00e9ky s\u00a0v\u00fdrazn\u011b v\u011bt\u0161\u00ed nab\u00eddkou piv ne\u017e\u00a0v\u00a0b\u011b\u017en\u00fdch obchodech (<a href=\"https:\/\/www.pivnici.cz\/obchod-pivoteka\/pivni-galerie\/\">Pivn\u00ed galerie<\/a> v\u00a0ulici U\u00a0Pr\u016fhonu u\u017e kolem roku 2002, <a href=\"https:\/\/www.pivnici.cz\/obchod-pivoteka\/base-camp\/\">Base Camp<\/a> v\u00a0ulici U\u00a0Stud\u00e1nky v\u00a0roce 2008, <a href=\"https:\/\/www.facebook.com\/Thirsty-Dock-1389536327985250\/\">Thirsty Dock<\/a> v\u00a0Kosteln\u00ed v\u00a0roce 2014). Nab\u00eddka \u0159emesln\u00e9ho piva ze zahrani\u010dn\u00ed i\u00a0\u010desk\u00e9 produkce se st\u00e1le roz\u0161i\u0159ovala a\u00a0bylo jen ot\u00e1zkou \u010dasu, kdy se na Sedmi\u010dku\u00a0v\u00a0n\u011bjak\u00e9 podob\u011b vr\u00e1t\u00ed i\u00a0komer\u010dn\u00ed v\u00fdroba piva.<\/p>\r\n<p><a href=\"https:\/\/www.praha7.cz\/z-historie-pivovarnictvi-na-sedmicce\/pivo4\/\" rel=\"attachment wp-att-49395\"><img loading=\"lazy\" src=\"https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/06\/pivo4-1495x1000.jpg\" alt=\"\" width=\"640\" height=\"428\" class=\"alignnone wp-image-49395 size-large\" srcset=\"https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/06\/pivo4-1495x1000.jpg 1495w, https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/06\/pivo4-598x400.jpg 598w, https:\/\/www.praha7.cz\/wp-content\/uploads\/2021\/06\/pivo4-768x514.jpg 768w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\r\n<p><strong>N\u00e1vrat pivovar\u016f<\/strong><br \/>\r\nStalo se tak nep\u0159\u00edli\u0161 daleko od p\u016fvodn\u00edho hole\u0161ovick\u00e9ho pivovaru \u2013 v\u00a0hole\u0161ovick\u00e9m p\u0159\u00edstavu, kde s\u00eddl\u00ed pivovar Marina. Budova b\u00fdval\u00e9ho celn\u00edho skladi\u0161t\u011b, pam\u00e1tkov\u011b chr\u00e1n\u011bn\u00e1 a\u00a0citliv\u011b opraven\u00e1, m\u00e1 v\u00a0\u00fatrob\u00e1ch krom\u011b samotn\u00e9ho pivovaru s\u00a0klasickou m\u011bd\u011bnou varnou o\u00a0objemu 200 hl tak\u00e9 dv\u011b restaurace \u2013 jedna, sp\u00ed\u0161e pivnice ne\u017e restaurace, nab\u00edz\u00ed \u010deskou kuchyni, druh\u00e1 italskou. Prvn\u00ed z\u00e1kazn\u00edky podnik p\u0159iv\u00edtal v\u00a0\u00fanoru 2013, tedy ve zlat\u00e9m v\u011bku v\u00fdstavby restaura\u010dn\u00edch pivovar\u016f u\u00a0n\u00e1s, a\u00a0stejn\u011b jako mnoho ostatn\u00edch se p\u0159i sestavov\u00e1n\u00ed nab\u00eddky piv dr\u017eel osv\u011bd\u010den\u00e9ho kvarteta v\u00fd\u010depn\u00ed \u2013 le\u017e\u00e1k \u2013 tmav\u00e9 \u2013 p\u0161enice, sem tam zpest\u0159en\u00e9ho\u00a0o\u00a0n\u011bjak\u00fd speci\u00e1l. Trouf\u00e1me si \u0159\u00edci, \u017ee cestu k\u00a0srdci m\u00edstn\u00edch piva\u0159\u016f si podnik nikdy tak \u00fapln\u011b nena\u0161el, mo\u017en\u00e1 kv\u016fli trochu odlehl\u00e9 poloze na sam\u00e9m okraji \u010dtvrti, mo\u017en\u00e1 kv\u016fli obchodn\u00ed strategii, v\u00a0r\u00e1mci n\u00ed\u017e se soust\u0159edil sp\u00ed\u0161 na gastroslu\u017eby pro z\u00e1jezdy zahrani\u010dn\u00edch turist\u016f. Kv\u016fli covidov\u00e9 krizi byla Marina uzav\u0159ena a\u00a0jej\u00ed dal\u0161\u00ed osud je nejist\u00fd.<\/p>\r\n<p>\u00dapln\u011b jin\u00fd p\u0159\u00edpad je pivovar<a href=\"http:\/\/pivovarlajka.cz\/\"> Lajka<\/a>, kter\u00fd se zrodil jako roz\u0161\u00ed\u0159en\u00ed slu\u017eeb zaveden\u00e9 letensk\u00e9 kav\u00e1rny na rohu ulic Socha\u0159sk\u00e1 a\u00a0U\u00a0Akademie. Z\u00e1m\u011br vybudovat vlastn\u00ed v\u00fdrobu piva vznikl v\u00a0hlav\u00e1ch spolumajitel\u016f nedlouho po otev\u0159en\u00ed kav\u00e1rny v\u00a0roce 2013. Sp\u00ed\u0161e jako impulzivn\u00ed rozhodnut\u00ed ne\u017e jako propracovan\u00fd byznyspl\u00e1n nabral konkr\u00e9tn\u00ed obrysy pot\u00e9, co dostali od sv\u00fdch man\u017eelek jako z\u00e1\u017eitkov\u00fd d\u00e1rek va\u0159en\u00ed piva v\u00a0pivovaru v\u00a0Nusl\u00edch. K\u00a0realizaci ale vedla dlouh\u00e1 cesta. V\u00fdb\u011br vhodn\u00e9ho za\u0159\u00edzen\u00ed, hled\u00e1n\u00ed sl\u00e1dka ochotn\u00e9ho se na projektu pod\u00edlet a\u00a0vy\u0159izov\u00e1n\u00ed v\u0161ech povolen\u00ed vyvrcholily rok trvaj\u00edc\u00edmi stavebn\u00edmi \u00fapravami a\u00a0instalac\u00ed pivovarsk\u00e9 technologie. Pivovar vybudovan\u00fd n\u00e1kladem cca 2 miliony korun nakonec zah\u00e1jil provoz na ja\u0159e roku 2019. Je vybaven technologi\u00ed \u010desk\u00e9 v\u00fdroby s\u00a0500litrovou varnou, ro\u010dn\u00ed v\u00fdstav \u010din\u00ed 300 hl piva a\u00a0je dan\u00fd hlavn\u011b kapacitou tank\u016f na uva\u0159en\u00e9 pivo, kterou majitel\u00e9 cht\u011bj\u00ed d\u00e1l roz\u0161i\u0159ovat. U\u017e dnes toti\u017e \u010d\u00e1st produkce nejobl\u00edben\u011bj\u0161\u00edho piva, des\u00edtky Strelky, zdej\u0161\u00ed sl\u00e1dek vzhledem k\u00a0vysok\u00e9 popt\u00e1vce va\u0159\u00ed na za\u0159\u00edzen\u00ed pivovaru Siberia ve Vyso\u010danech.<\/p>\r\n<p>V\u00a0sou\u010dasnosti je v\u00a0nab\u00eddce sedm druh\u016f piva. V\u0161e, co uva\u0159\u00ed, podnik s\u00e1m prod\u00e1 \u010depovan\u00e9 nebo v\u00a0lahv\u00edch. Takto funguje i\u00a0pivovar<a href=\"http:\/\/www.pivovarhangar.cz\/#!tab-curriculum\"> Hang\u00e1r<\/a>, kter\u00fd sice nes\u00eddl\u00ed p\u0159\u00edmo v\u00a0Praze 7 (pokud m\u00e1 v\u00a0p\u0159\u00edpad\u011b l\u00e9taj\u00edc\u00edch pivovar\u016f v\u016fbec smysl o\u00a0s\u00eddle mluvit), ale m\u00e1 zde svou pivnici, a\u00a0proto se o\u00a0n\u011bm zm\u00edn\u00edme. Vznikl podobn\u011b jako mnoho jin\u00fdch, kdy\u017e si p\u00e1r p\u0159\u00e1tel cht\u011blo uva\u0159it vlastn\u00ed pivo. Po kr\u00e1tk\u00fdch experimentech s\u00a0va\u0159en\u00edm ze sladov\u00fdch v\u00fdta\u017ek\u016f si v\u00a0roce 2011 po\u0159\u00eddili dom\u00e1c\u00ed pivovar Speidel Braumeister o\u00a0obsahu 50 litr\u016f. V\u00a0n\u011bm pivovarn\u00edci sdru\u017een\u00ed kolem Davida Binara, mj. autora seri\u00e1lu Pivn\u00ed republika (Televize Seznam), uva\u0159ili sv\u00e9 prvn\u00ed pivo IPA Pilot 15\u00b0, je\u017e v\u00a0nezm\u011bn\u011bn\u00e9 podob\u011b produkuj\u00ed dodnes. Dom\u00e1c\u00ed va\u0159en\u00ed, zkou\u0161en\u00ed r\u016fzn\u00fdch pivn\u00edch styl\u016f a\u00a0lad\u011bn\u00ed recept\u016f jim za\u010dalo b\u00fdt po letech m\u00e1lo a\u00a0zalo\u017een\u00ed l\u00e9taj\u00edc\u00edho pivovaru v\u00a0roce 2017 bylo logick\u00fdm krokem p\u0159i p\u0159echodu na komer\u010dn\u00ed v\u00fdrobu. Sudov\u00e9 pivo uva\u0159en\u00e9 v\u00a0pivovarech Zloun a\u00a0\u0158eporyje dod\u00e1v\u00e1 Hang\u00e1r do r\u016fzn\u00fdch podnik\u016f po cel\u00e9 Praze. A\u00a0od l\u00e9taj\u00edc\u00edho pivovaru je jen kr\u016f\u010dek k\u00a0vlastn\u00edmu pivovaru, kter\u00fd by m\u011bl brzo spat\u0159it sv\u011btlo sv\u011bta v\u00a0Let\u0148anech. Pokud budete cht\u00edt p\u0159ist\u00e1t u\u00a0dobr\u00e9ho piva, m\u00e1te mo\u017enost v\u00a0Jire\u010dkov\u011b ulici 15.<\/p>\r\n<p>Model l\u00e9taj\u00edc\u00edho pivovaru zvolili pro vlastn\u00ed zna\u010dku piva tak\u00e9 spolumajitel\u00e9 pivot\u00e9ky a\u00a0n\u00e1pojky <a href=\"https:\/\/www.m0st.cz\/\">M0ST<\/a>. Budete-li je hledat na internetu, je d\u016fle\u017eit\u00e9 v\u011bd\u011bt, \u017ee po M nen\u00e1sleduje O, ale nula symbolizuj\u00edc\u00ed zero waste (\u017e\u00e1dn\u00fd odpad) \u2013 koncept, o\u00a0n\u011bj\u017e se majitel\u00e9 dlouhodob\u011b sna\u017e\u00ed. Ji\u017e dnes maj\u00ed kolem 40&nbsp;% nab\u00eddky v\u00a0z\u00e1lohovan\u00fdch obalech (k\u00a0tomu je t\u0159eba dodat, \u017ee mal\u00e9 pivovary z\u00a0logistick\u00fdch d\u016fvod\u016f pou\u017e\u00edvaj\u00ed lahve p\u0159ev\u00e1\u017en\u011b nez\u00e1lohovan\u00e9). M0ST m\u00e1 v\u00a0Praze 7 dv\u011b prodejny v\u00a0ulic\u00edch Pplk. Sochora a\u00a0Oveneck\u00e9 a\u00a0vznikl jako n\u00e1pad dvou kamar\u00e1d\u016f, Pavla Votavy a\u00a0Vojt\u011bcha Anto\u0161e, v\u00a0roce 2019. Monitorov\u00e1n\u00ed \u010desk\u00e9 a\u00a0zahrani\u010dn\u00ed produkce n\u00e1poj\u016f a\u00a0ochutn\u00e1v\u00e1n\u00ed piv z\u00a0vlastn\u00ed nab\u00eddky je vedlo k\u00a0my\u0161lence nab\u00eddnout pivo podle jejich vlastn\u00edch p\u0159edstav a\u00a0chut\u00ed. Ve spolupr\u00e1ci s\u00a0pivovarem Ch\u0159\u00ed\u010d vzniklo nejprve pivo Letensk\u00fd M0ST, t\u0159in\u00e1ctistup\u0148ov\u00fd le\u017e\u00e1k jantarov\u00e9 barvy. Letos v\u00a0kv\u011btnu uva\u0159il M0ST spole\u010dn\u011b s\u00a0Pivovarem Svat\u00fd Petr, projektem dal\u0161\u00edho Lete\u0148\u00e1ka Petra Holick\u00e9ho, 200 litr\u016f piva stylu Berliner Weisse. Ka\u017ed\u00e1 pivn\u00ed zna\u010dka p\u0159itom se svoj\u00ed polovinou t\u00e9to v\u00e1rky nalo\u017eila jinak. Petr Holick\u00fd jej nechal tak, jak je (nedochucoval ho) a\u00a0pojmenoval ho Berliner Weih Sour. Lahvov\u00e9 pivo z\u00a0jeho pivovaru se\u017eenete ve Sk\u00e1lov\u011b ml\u00e9k\u00e1rn\u011b (He\u0159manova 17), na to\u010den\u00e9 m\u016f\u017eete ob\u010das narazit v\u00a0Kovadlin\u011b (Kosteln\u00ed 8) nebo U\u00a0Kohouta (Janovsk\u00e9ho 36). M0ST sv\u016fj hektolitr dochutil ugandsk\u00fdm ananasem a\u00a0od konce kv\u011btna je k\u00a0dost\u00e1n\u00ed v\u00a0obou jeho provozovn\u00e1ch. A\u010dkoliv si pivo m\u016f\u017eete uva\u0159it i\u00a0v\u00a0hrnci na spor\u00e1ku, l\u00e9pe to jde se zava\u0159ovac\u00edm hrncem\u00a0s\u00a0regulac\u00ed teploty a\u00a0je\u0161t\u011b l\u00e9pe s\u00a0dom\u00e1c\u00edm pivovarem pro infuzn\u00ed va\u0159en\u00ed piva (co\u017e je v\u00a0principu zava\u0159ovac\u00ed hrnec vylep\u0161en\u00fd s\u00edty, ob\u011bhov\u00fdm \u010derpadlem a\u00a0programovatelnou \u0159\u00eddic\u00ed jednotkou, kter\u00e1 v\u00a0hrnci udr\u017euje teploty po nastaven\u00e9 \u010dasy). I\u00a0s\u00a0p\u011bkn\u00fdm dom\u00e1c\u00edm pivovarem (za p\u0159\u00edstroj s\u00a0pades\u00e1tilitrovou varnou zaplat\u00edte \u0159\u00e1dov\u011b des\u00edtky tis\u00edc korun) ale uva\u0159en\u00ed jedn\u00e9 v\u00e1rky piva p\u0159edstavuje \u0159ekn\u011bme p\u016flden pr\u00e1ce, chv\u00edlemi i\u00a0docela nam\u00e1hav\u00e9. Ty, kdo ji podstupuj\u00ed, k\u00a0tomu sp\u00ed\u0161 ne\u017e snaha o\u00a0finan\u010dn\u00ed \u00fasporu vede zv\u011bdavost, chu\u0165 vyzkou\u0161et si va\u0159en\u00ed na vlastn\u00ed k\u016f\u017ei a\u00a0radost z\u00a0vyda\u0159en\u00e9ho d\u00edla (pokud se tedy d\u00edlo vyda\u0159\u00ed, co\u017e v\u00a0dom\u00e1c\u00edch podm\u00ednk\u00e1ch nen\u00ed nikdy zaru\u010deno). Ekonomicky ned\u00e1v\u00e1 dom\u00e1c\u00ed v\u00fdroba piva v\u00a0porovn\u00e1n\u00ed s\u00a0cenami v\u00a0pivot\u00e9k\u00e1ch p\u0159\u00edli\u0161 smysl a\u00a0t\u0159eba v\u00a0p\u0159\u00edpad\u011b klasick\u00e9ho le\u017e\u00e1ku plze\u0148sk\u00e9ho typu je tak\u00e9 technicky problematick\u00e1 \u2013 spodn\u011b kva\u0161en\u00e1 piva kvas\u00ed p\u0159i teplot\u00e1ch okolo deseti stup\u0148\u016f Celsia, zat\u00edmco k\u00e1\u010f se svrchn\u011b kva\u0161en\u00fdm pivem (r\u016fzn\u00e9 druhy ejl\u016f, p\u0161eni\u010dn\u00e9 pivo) \u00fasp\u011b\u0161n\u011b prokvas\u00ed p\u0159i b\u011b\u017en\u00e9 pokojov\u00e9 teplot\u011b.<\/p>\r\n<p>Zmapovat dom\u00e1c\u00ed va\u0159en\u00ed piva, kter\u00e9 je z\u00a0povahy v\u011bci soukromou z\u00e1le\u017eitost\u00ed, je obt\u00ed\u017en\u00fd \u00fakol. Va\u0159en\u00ed piva podom\u00e1cku je zcela leg\u00e1ln\u00ed aktivita a\u00a0ka\u017ed\u00fd si sm\u00ed uva\u0159it a\u017e 2000 litr\u016f piva ro\u010dn\u011b, ani\u017e by musel zaplatit spot\u0159ebn\u00ed da\u0148. Limit byl desetin\u00e1sobn\u011b zv\u00fd\u0161en v\u00a0roce 2019, p\u0159edchoz\u00ed dvousetlitrov\u00e1 hranice aktivn\u011bj\u0161\u00edm domovarn\u00edk\u016fm dosti svazovala ruce. Ne\u017e zah\u00e1j\u00edte dom\u00e1c\u00ed va\u0159en\u00ed piva, mus\u00edte to ale p\u00edsemn\u011b ozn\u00e1mit nejbli\u017e\u0161\u00edmu celn\u00edmu \u00fa\u0159adu a\u00a0vyroben\u00e9 pivo nesm\u00edte prod\u00e1vat. Hlavn\u011b v\u00a0minulosti \u0159ada domovarn\u00edk\u016f nebyla s\u00a0nastaven\u00fdmi pravidly p\u0159\u00edli\u0161 konformn\u00ed, a\u00a0proto ani dnes necht\u011bj\u00ed o\u00a0sv\u00fdch pivovarnick\u00fdch za\u010d\u00e1tc\u00edch nic publikovat. Nebudeme se tedy sna\u017eit domovarnickou sc\u00e9nu v\u00a0Praze 7 kompletn\u011b zmapovat, ale omez\u00edme se jen na n\u011bkolik p\u0159\u00edklad\u016f.<\/p>\r\n<p><a href=\"http:\/\/www.pivo-gabriel.cz\/\">Pivovar Gabriel<\/a>, kter\u00fd funguje na b\u00e1zi spolku a\u00a0jeho\u017e \u00fast\u0159edn\u00ed postavou je Tom\u00e1\u0161 Gabriel, vznikl u\u017e na podzim 2007 a\u00a0hl\u00e1s\u00ed se k\u00a0odkazu n\u011bkdej\u0161\u00edho bubensk\u00e9ho pivovaru, po jeho\u017e historii tak\u00e9 p\u00e1tr\u00e1. Jak to u\u00a0podobn\u00fdch projekt\u016f b\u00fdv\u00e1, postupn\u011b se nakupuje dal\u0161\u00ed a\u00a0dal\u0161\u00ed pr\u00e1ci uleh\u010duj\u00edc\u00ed vybaven\u00ed a\u00a0roste tak\u00e9 po\u010det zapojen\u00fdch lid\u00ed. P\u016fvodn\u00ed parta p\u0159\u00e1tel se rozrostla na dne\u0161n\u00edch 50 \u010dlen\u016f, kte\u0159\u00ed spole\u010dn\u011b uva\u0159\u00ed kolem 400 litr\u016f piva za rok a\u00a0se sv\u00fdmi produkty se \u00fa\u010dastn\u00ed i\u00a0r\u016fzn\u00fdch domovarnick\u00fdch sout\u011b\u017e\u00ed. Nutno tak\u00e9 dodat, \u017ee va\u0159en\u00ed piva je jen jednou z\u00a0\u0159ady aktivit, je\u017e sdru\u017een\u00ed podnik\u00e1 a\u00a0kter\u00e9 souvisej\u00ed nejen s\u00a0pivem a\u00a0jeho va\u0159en\u00edm, ale i\u00a0s\u00a0turistikou a\u00a0kulturou.<\/p>\r\n<p>Modelu, jemu\u017e se v\u00a0N\u011bmecku \u0159\u00edk\u00e1 \u201ezoigl\u201c, se dr\u017e\u00ed skupina domovarn\u00edk\u016f kolem amat\u00e9rsk\u00e9ho sl\u00e1dka Martina \u0160vomy, kter\u00e1 se pojmenovala Pivolet. Zoigl je voln\u00e9 sdru\u017een\u00ed domovarn\u00edk\u016f, kte\u0159\u00ed va\u0159\u00ed ka\u017ed\u00fd s\u00e1m za sebe, ale maj\u00ed spole\u010dn\u00e9 vybaven\u00ed, je\u017e si p\u016fj\u010duj\u00ed. \u201eV\u00a0praxi to vypad\u00e1 tak, \u017ee recept vybere a\u00a0suroviny nakoup\u00ed poka\u017ed\u00e9 n\u011bkdo jin\u00fd, ostatn\u00ed mu p\u0159i va\u0159en\u00ed pom\u00e1haj\u00ed a\u00a0o\u00a0uva\u0159en\u00e9 pivo se pod\u011bl\u00ed \u010dlenov\u00e9 zoiglu a\u00a0jejich rodinn\u00ed p\u0159\u00edslu\u0161n\u00edci,\u201c vysv\u011btluje Martin \u0160voma. On\u00edm sd\u00edlen\u00fdm vybaven\u00edm je pades\u00e1tilitrov\u00fd dom\u00e1c\u00ed pivovar Speidel Braumeister a\u00a0voln\u00e9 sdru\u017een\u00ed, do kter\u00e9ho je zapojeno asi deset lid\u00ed a\u00a0pat\u0159\u00ed mezi n\u011b i\u00a0oba spoluauto\u0159i tohoto \u010dl\u00e1nku, na n\u011bm uva\u0159\u00ed n\u011bco mezi t\u0159emi a\u00a0\u010dty\u0159mi hektolitry piva ro\u010dn\u011b. Poka\u017ed\u00e9 se va\u0159\u00ed jin\u00e9 pivo, a\u00a0p\u0159esto\u017ee se nikde neprod\u00e1v\u00e1, sou\u010d\u00e1st\u00ed \u201ehry na pivovar\u201c jsou pro Pivolet i\u00a0vlastn\u00ed etikety. \u201eVym\u00fd\u0161len\u00ed n\u00e1zvu piva, kter\u00e9 pr\u00e1v\u011b va\u0159\u00edme, je obl\u00edbenou kratochv\u00edl\u00ed b\u011bhem na\u0161ich pivovarnick\u00fdch se\u0161lost\u00ed,\u201c dod\u00e1v\u00e1 \u0160voma.
