Jedn\u00edm z\u00a0jeho projev\u016f byla snaha veden\u00ed m\u011bsta um\u00edstit do nov\u00e9 \u010dtvrti d\u016fle\u017eit\u00e9 m\u011bstsk\u00e9 podniky. V\u00a0dob\u011b p\u0159ipojen\u00ed zde ji\u017e fungovala obecn\u00ed plyn\u00e1rna, v\u00a0devades\u00e1t\u00fdch letech se za\u010dal budovat hole\u0161ovick\u00fd p\u0159\u00edstav a&nbsp;na sam\u00e9m konci stolet\u00ed \u00dast\u0159edn\u00ed elektrick\u00e1 stanice kr\u00e1lovsk\u00e9ho hlavn\u00edho m\u011bsta Prahy (v\u017eil se pro ni n\u00e1zev Centr\u00e1la). Patrn\u011b nejv\u00fdznamn\u011bj\u0161\u00edm a&nbsp;zcela jist\u011b nejrozs\u00e1hlej\u0161\u00edm podnikem z\u00a0t\u00e9to doby byly ale \u00dast\u0159edn\u00ed jatky hlavn\u00edho m\u011bsta Prahy.<\/p>\r\n<p>[\/perex]<\/p>\r\n<p><strong>Masn\u00e9 kr\u00e1my<\/strong><br \/>\r\nPor\u00e1\u017eka dobytka a&nbsp;zpracov\u00e1v\u00e1n\u00ed masa ve m\u011bstech pochopiteln\u011b nebyly koncem 19.&nbsp;stolet\u00ed ni\u010d\u00edm nov\u00fdm. U\u017e od st\u0159edov\u011bku fungovaly ve m\u011bstech tzv. masn\u00e9 kr\u00e1my, kde se pod kuratelou \u0159eznick\u00fdch cech\u016f prov\u00e1d\u011blo por\u00e1\u017een\u00ed dobytka a&nbsp;zpracov\u00e1v\u00e1n\u00ed masa ur\u010den\u00e9ho ke konzumaci. V\u00a0druh\u00e9 polovin\u011b 19.&nbsp;stolet\u00ed tuto \u010dinnost p\u0159evzala nov\u011b konstituovan\u00e1 spole\u010denstv\u00ed \u0159ezn\u00edk\u016f, p\u0159i\u010dem\u017e dohled nad prodejem masa a&nbsp;jeho nez\u00e1vadnost\u00ed m\u011bly za povinnost danou z\u00e1konem z\u00a0roku 1864 obce. Masn\u00e9 kr\u00e1my tak fungovaly i&nbsp;v\u00a0Praze, nap\u0159\u00edklad na Mal\u00e9 Stran\u011b v\u00a0dne\u0161n\u00ed ulici U&nbsp;Lu\u017eick\u00e9ho semin\u00e1\u0159e, dle pravidel \u017eidovsk\u00e9ho ritu prob\u00edhala por\u00e1\u017eka (tzv. ko\u0161erov\u00e1n\u00ed) v\u00a0Josefov\u011b. V\u00a0provozu byly i&nbsp;jatky na tehdej\u0161\u00edch p\u0159edm\u011bst\u00edch \u2013 v\u00a0Karl\u00edn\u011b, na Sm\u00edchov\u011b nebo na Vinohradech.<\/p>\r\n<p>Um\u00edst\u011bn\u00ed por\u00e1\u017eek se \u0159\u00eddilo dv\u011bma z\u00e1kladn\u00edmi, pon\u011bkud v\u0161ak protich\u016fdn\u00fdmi aspekty. Na jedn\u00e9 stran\u011b z\u00a0hlediska hygieny problematick\u00fd provoz uprost\u0159ed vysoce zalidn\u011bn\u00fdch \u010d\u00e1st\u00ed m\u011bsta, na druh\u00e9 stran\u011b nutnost prod\u00e1vat v\u00fdsledn\u00e9 produkty pr\u00e1v\u011b lidem uvnit\u0159 m\u011bst. Tlak obyvatel i&nbsp;centr\u00e1ln\u00edch org\u00e1n\u016f nakonec vedl p\u0159edstavitele Prahy k\u00a0rozhodnut\u00ed postavit modern\u00ed centr\u00e1ln\u00ed jatky, kter\u00e9 m\u011bly nap\u0159\u00ed\u0161t\u011b nahradit por\u00e1\u017eku v\u00a0jednotliv\u00fdch \u010d\u00e1stech Prahy i&nbsp;v\u00a0okoln\u00edch obc\u00edch. V\u00a0roce 1872 vybrala pra\u017esk\u00e1 obec pro vystav\u011bn\u00ed jatek pozemek na lev\u00e9m b\u0159ehu Vltavy pobl\u00ed\u017e karl\u00ednsk\u00e9ho (Negrelliho) \u017eelezni\u010dn\u00edho viaduktu. Volba m\u00edsta nebyla n\u00e1hodn\u00e1 \u2013 v\u00fdhodu sk\u00fdtala pr\u00e1v\u011b bl\u00edzkost \u017eelezni\u010dn\u00ed trati, stejn\u011b jako poloha pobl\u00ed\u017e \u0159eky coby zdroje nezbytn\u00e9 vody. Tehdy tato parcela spl\u0148ovala i&nbsp;dal\u0161\u00ed podm\u00ednku \u2013 le\u017eela stranou z\u00e1stavby, tak\u017ee ani jej\u00ed majitel obec Hole\u0161ovice-Bubny nem\u011bl s\u00a0prodejem z\u00e1sadn\u00ed probl\u00e9m.<\/p>\r\n<p>P\u0159i pl\u00e1nov\u00e1n\u00ed stavby a&nbsp;provozu jatek se, jako \u010dastokr\u00e1t p\u0159edt\u00edm i&nbsp;pot\u00e9, projevila ur\u010dit\u00e1 rivalita mezi Prahou a&nbsp;p\u0159edm\u011bst\u00edmi. P\u0159edstavitel\u00e9 \u017di\u017ekova \u010di Vr\u0161ovic byli od po\u010d\u00e1tku naklon\u011bni spolupr\u00e1ci s\u00a0Prahou, zat\u00edmco dal\u0161\u00ed v\u00fdznamn\u00e1 tehdy samostatn\u00e1 m\u011bsta, Karl\u00edn, Kr\u00e1lovsk\u00e9 Vinohrady nebo Sm\u00edchov, se stav\u011bla k\u00a0ot\u00e1zce spole\u010dn\u00e9ho \u0159e\u0161en\u00ed por\u00e1\u017eky odm\u00edtav\u011b. Komplikovan\u00e1 jedn\u00e1n\u00ed se t\u00e1hla \u0159adu let, nevoli pra\u017esk\u00fdch p\u0159edm\u011bst\u00ed tak musel zvr\u00e1tit a\u017e zemsk\u00fd z\u00e1kon z\u00a0dubna 1889, kter\u00fd \u201erebeluj\u00edc\u00edm\u201c p\u0159edm\u011bst\u00edm p\u0159\u00edslu\u0161nost k\u00a0budouc\u00edmu jate\u010dn\u00edmu obvodu prost\u011b p\u0159ik\u00e1zal. Prvn\u00ed paragraf uveden\u00e9ho z\u00e1kona jasn\u011b definoval povinnosti z&nbsp;n\u011bj vypl\u00fdvaj\u00edc\u00ed: \u201eNa \u00fazem\u00ed kr\u00e1l. hlav. m\u011bsta Prahy, p\u0159edm\u011bst\u00ed Pra\u017esk\u00fdch a&nbsp;obc\u00ed sousedn\u00edch, kter\u00e9 jsou uvedeny v\u00a0par. 2 t.z., zav\u00e1d\u00ed se povinn\u00e9 u\u017e\u00edv\u00e1n\u00ed jatek, tj. nesm\u011bj\u00ed se: velik\u00fd dobytek hov\u011bz\u00ed, drobn\u00fd dobytek v\u0161eho druhu (jako telata, ovce, kozy, prasata a.t.p.) a&nbsp;kon\u011b por\u00e1\u017eeti nikde jinde le\u010d na ve\u0159ejn\u00fdch jatk\u00e1ch obecn\u00edch za t\u00edm \u00fa\u010delem tak z\u0159\u00edzen\u00fdch.\u201c I&nbsp;kdy\u017e se z\u00e1stupci n\u011bkter\u00fdch pra\u017esk\u00fdch p\u0159edm\u011bst\u00ed proti p\u0159\u00edslu\u0161nosti k\u00a0obvodu jatek odvolali, v\u00edde\u0148sk\u00fd spr\u00e1vn\u00ed soud v\u00a0roce 1891 tyto n\u00e1mitky zam\u00edtl a&nbsp;po v\u00edce ne\u017e dvou dek\u00e1d\u00e1ch p\u0159iprav a&nbsp;obstrukc\u00ed se mohlo za\u010d\u00edt stav\u011bt. Fakticky se ale poda\u0159ilo n\u011bkter\u00e9 p\u016fvodn\u011b p\u0159edm\u011bstsk\u00e9 jatky uzav\u0159\u00edt a\u017e o&nbsp;mnoho let pozd\u011bji \u2013 na Vinohradech a&nbsp;v\u00a0Karl\u00edn\u011b a\u017e v\u00a0roce 1929.\u00a0<\/p>\r\n<p><strong>Potravn\u00ed da\u0148<\/strong> <br \/>\r\nKv\u016fli pom\u011brn\u011b rozs\u00e1hl\u00e9 \u00fazemn\u00ed p\u016fsobnosti jatek bylo t\u0159eba vy\u0159e\u0161it je\u0161t\u011b jeden probl\u00e9m. V\u00a019.&nbsp;stolet\u00ed bylo b\u011b\u017en\u00e9, \u017ee p\u0159i dov\u00e1\u017een\u00ed potravin (a&nbsp;typicky masa) do m\u011bst bylo pot\u0159eba zaplatit tzv. potravn\u00ed da\u0148 na \u010d\u00e1\u0159e. Akc\u00edz, jak se da\u0148 tak\u00e9 naz\u00fdvala, bylo v\u00a0p\u0159\u00edpad\u011b Prahy nutn\u00e9 uhradit p\u0159i vstupu do vnit\u0159n\u00edho m\u011bsta (je\u017e tehdy tvo\u0159ily Star\u00e9 a&nbsp;Nov\u00e9 M\u011bsto, Hrad\u010dany, Mal\u00e1 Strana a&nbsp;Josefov). V\u00a0okoln\u00edch p\u0159edm\u011bst\u00edch se ale da\u0148 neplatila.<\/p>\r\n<p>Pom\u011brn\u011b kuri\u00f3zn\u00ed je fakt, \u017ee na \u00fazem\u00ed Hole\u0161ovic-Bubn\u016f, kter\u00e9 byly ji\u017e ned\u00edlnou sou\u010d\u00e1st\u00ed Prahy, se povinnost platit potravn\u00ed da\u0148 nevztahovala. Potravn\u00ed \u010d\u00e1\u0159e tak musela b\u00fdt p\u0159izp\u016fsobena i&nbsp;vnit\u0159n\u00ed dispozice are\u00e1lu, nav\u00edc bylo t\u0159eba kontrolovat, aby se nezdan\u011bn\u00e9 maso nedostalo do vnit\u0159n\u00edho m\u011bsta. Z\u00a0tohoto d\u016fvodu byly pozd\u011bji z\u0159\u00edzeny i&nbsp;zvl\u00e1\u0161tn\u00ed hl\u00eddky mezi are\u00e1lem jatek a&nbsp;mostem C\u00edsa\u0159e Franti\u0161ka Josefa II. V\u00a0dob\u011b stavby are\u00e1lu se p\u0159epokl\u00e1dalo, \u017ee rozd\u011blen\u00ed na por\u00e1\u017eku \u201es dan\u00ed\u201c a&nbsp;\u201ebez dan\u011b\u201c brzy zanikne. Nakonec k\u00a0tomu do\u0161lo a\u017e v\u00a0roce 1922, p\u0159i\u010dem\u017e zcela zru\u0161en byl akc\u00edz a\u017e b\u011bhem druh\u00e9 sv\u011btov\u00e9 v\u00e1lky.\u00a0\u00a0\u00a0<\/p>\r\n<p><strong>Stavba are\u00e1lu<\/strong><br \/>\r\nStavebn\u00ed povolen\u00ed k&nbsp;vybudov\u00e1n\u00ed jatek bylo vyd\u00e1no v\u00a0\u0159\u00edjnu 1892. Projekt na v\u00fdstavbu are\u00e1lu vypracoval architekt Josef Srd\u00ednko (1850\u20131900). Rozs\u00e1hl\u00fd komplex postavila stavebn\u00ed firma Aloise Elhenick\u00e9ho (1844\u20131915), je\u017e se pod\u00edlela i&nbsp;na stavb\u011b letensk\u00e9ho s\u00eddla Akademie v\u00fdtvarn\u00fdch um\u011bn\u00ed. Dnes ji\u017e pozapomenut\u00fd Elhenick\u00fd nebyl jen podnikatelem ve stavebnictv\u00ed, anga\u017eoval se i&nbsp;v\u00a0politice, v\u00a0letech 1889\u20131895 byl poslancem \u010desk\u00e9ho zemsk\u00e9ho sn\u011bmu, ale p\u0159edev\u0161\u00edm zast\u00e1val t\u00e9m\u011b\u0159 dv\u011b dek\u00e1dy funkci starosty Sm\u00edchova (1888\u20131906).<\/p>\r\n<p>Budov\u00e1n\u00ed are\u00e1lu na obd\u00e9ln\u00edkov\u00e9m p\u016fdorysu 455 x 240 metr\u016f mezi ulicemi Jeron\u00fdmova (dnes Argentinsk\u00e1), Jate\u010dn\u00ed, Rohansk\u00e1 (Komunard\u016f) a&nbsp;Vltavsk\u00e1 (Bubensk\u00e9 n\u00e1b\u0159e\u017e\u00ed) bylo zah\u00e1jeno v\u00a0b\u0159eznu 1893. Stavba n\u011bkter\u00fdch objekt\u016f se neobe\u0161la bez t\u011b\u017ekost\u00ed \u2013 vzhledem k\u00a0nestabiln\u00edmu povrchu tvo\u0159en\u00e9mu \u0159\u00ed\u010dn\u00edmi n\u00e1nosy a&nbsp;nav\u00e1\u017ekou bylo t\u0159eba kopat z\u00e1klady do hloubky a\u017e osm metr\u016f. Je\u0161t\u011b b\u011bhem stavby (v&nbsp;roce 1894) doch\u00e1zelo ke zm\u011bn\u00e1m v\u00a0projektu. Uva\u017eovalo se, \u017ee v\u00a0are\u00e1lu vznikne i&nbsp;kafilerie ur\u010den\u00e1 na likvidaci \u017eivo\u010di\u0161n\u00e9ho odpadu. K\u00a0tomu nakonec nedo\u0161lo, v\u00a0roce 1900 se objevila my\u0161lenka postavit kafilern\u00ed spalovnu v\u00a0oblasti Manin. Pro fungov\u00e1n\u00ed jatek bylo mimo\u0159\u00e1dn\u011b d\u016fle\u017eit\u00e9 vy\u0159e\u0161it i&nbsp;dopravu dobytka k\u00a0por\u00e1\u017ece. Drtiv\u00e1 v\u011bt\u0161ina zv\u00ed\u0159at sem byla p\u0159iv\u00e1\u017eena po \u017eeleznici, proto byla vybudov\u00e1na \u017eelezni\u010dn\u00ed vle\u010dka z\u00a0bl\u00edzk\u00e9ho bubensk\u00e9ho n\u00e1dra\u017e\u00ed\u00a0a v&nbsp;are\u00e1lu p\u0159i dne\u0161n\u00ed Argentinsk\u00e9 ulici st\u00e1la vykl\u00e1dac\u00ed rampa, kam se ve\u0161lo celkem dvacet vagon\u016f. Zde tak kon\u010dila pou\u0165 tis\u00edc\u016f kus\u016f dobytka nejen z\u00a0\u010cech, ale i&nbsp;z\u00a0Uher a&nbsp;Hali\u010de. Kapacita jate\u010dn\u00edho are\u00e1lu byla navr\u017eena tak, aby bylo mo\u017en\u00e9 vyprodukovan\u00fdm masem z\u00e1sobovat 350&nbsp;000 a&nbsp;pozd\u011bji p\u016fl milionu osob. <br \/>\r\nSou\u010d\u00e1st\u00ed komplexu byl i&nbsp;dobyt\u010d\u00ed a&nbsp;masn\u00fd trh, dala se zde koupit rovn\u011b\u017e \u017eiv\u00e1 zv\u00ed\u0159ata. Zpo\u010d\u00e1tku se konal dvakr\u00e1t za t\u00fdden, \u00fadajn\u011b zde bylo nab\u00edzeno cca 200 kus\u016f hov\u011bz\u00edho dobytka t\u00fddn\u011b, v\u00a0p\u0159\u00edpad\u011b prasat byla nab\u00eddka \u0159\u00e1dov\u011b vy\u0161\u0161\u00ed. Dov\u00e1\u017eeno sem bylo ale tak\u00e9 zpracovan\u00e9 maso z\u00a0venkova i&nbsp;z\u00a0ciziny a&nbsp;mohlo tak b\u00fdt p\u0159ed prodejem zkontrolov\u00e1no veterin\u00e1\u0159em.\u00a0\u00a0<\/p>\r\n<p><img loading=\"lazy\" src=\"https:\/\/www.praha7.cz\/wp-content\/uploads\/2019\/03\/03-jatky-skopov\u2020-por\u2020\u00dfka-05-kopie-1456x1000.jpg\" alt=\"\" width=\"640\" height=\"440\" class=\"alignnone size-large wp-image-25697\" srcset=\"https:\/\/www.praha7.cz\/wp-content\/uploads\/2019\/03\/03-jatky-skopov\u2020-por\u2020\u00dfka-05-kopie-1456x1000.jpg 1456w, https:\/\/www.praha7.cz\/wp-content\/uploads\/2019\/03\/03-jatky-skopov\u2020-por\u2020\u00dfka-05-kopie-582x400.jpg 582w, https:\/\/www.praha7.cz\/wp-content\/uploads\/2019\/03\/03-jatky-skopov\u2020-por\u2020\u00dfka-05-kopie-768x527.jpg 768w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><br \/>\r\n<em>Skopov\u00e1 por\u00e1\u017eka<\/em><\/p>\r\n<p>Cel\u00fd are\u00e1l si vy\u017e\u00e1dal investici ve v\u00fd\u0161i tehdej\u0161\u00edch 5,2 milionu korun a&nbsp;do provozu byl uveden 1.&nbsp;\u010dervence 1895. A\u010dkoli m\u011bly jatky slou\u017eit nejen pro Prahu, ale i&nbsp;pro p\u0159edm\u011bst\u00ed, n\u00e1klady na jejich v\u00fdstavbu pln\u011b hradila pra\u017esk\u00e1 obec. Podobn\u00e9 to bylo s\u00a0provozem, i&nbsp;p\u0159es mno\u017estv\u00ed vyb\u00edran\u00fdch poplatk\u016f hospoda\u0159il tento m\u011bstsk\u00fd \u201e\u00fastav\u201c v\u00a0obdob\u00ed do prvn\u00ed sv\u011btov\u00e9 v\u00e1lky t\u00e9m\u011b\u0159 v\u017edy s\u00a0deficitem. I&nbsp;\u010d\u00e1st zdej\u0161\u00edho person\u00e1lu tvo\u0159ili m\u011bst\u0161t\u00ed zam\u011bstnanci \u2013 v\u00a0prvn\u00edm roce jich zde pracovalo \u0161edes\u00e1t, zdravotn\u00ed dohled vykon\u00e1valo \u0161est zv\u011brol\u00e9ka\u0159\u016f. V\u00a0are\u00e1lu ale nach\u00e1zely ob\u017eivu dal\u0161\u00ed stovky lid\u00ed \u2013 drobn\u00ed \u017eivnostn\u00edci \u010dasto specializovan\u00ed na zpracov\u00e1n\u00ed \u010d\u00e1st\u00ed zv\u00ed\u0159at (st\u0159eva\u0159i, dr\u017eka\u0159i, jirch\u00e1\u0159i apod.) nebo poskytovatel\u00e9 slu\u017eeb nutn\u00fdch pro fungov\u00e1n\u00ed cel\u00e9ho podniku (no\u017e\u00ed\u0159i, povozn\u00edci apod.). V\u00a0roce 1911 zde tak\u00e9 p\u016fsobilo t\u00e9m\u011b\u0159 p\u011bt des\u00edtek \u201evelko\u0159ezn\u00edk\u016f\u201c, tedy podnikatel\u016f, kte\u0159\u00ed prod\u00e1vali masn\u00e9 produkty velkoobchodn\u00ed formou.\u00a0<\/p>\r\n<p>Snaha pra\u017esk\u00e9 obce o&nbsp;centralizov\u00e1n\u00ed por\u00e1\u017eky dobytka a&nbsp;obchodu s\u00a0masem byla po des\u00edtk\u00e1ch let korunov\u00e1na \u00fasp\u011bchem a&nbsp;provoz se pom\u011brn\u011b rychle rozb\u011bhl. Jate\u010dn\u00ed obvod, kter\u00fd zahrnoval nejen Prahu, ale i&nbsp;tehdej\u0161\u00ed p\u0159edm\u011bst\u00ed, celkem p\u0159esn\u011b kop\u00edroval hranice Velk\u00e9 Prahy (tedy ji\u017e v\u010detn\u011b \u017di\u017ekova, Sm\u00edchova a&nbsp;Karl\u00edna atd.), kter\u00e1 ov\u0161em vznikla a\u017e v\u00a0roce 1922. Stejn\u011b tak a\u017e v\u00a0pr\u016fb\u011bhu dvac\u00e1t\u00fdch let 20.&nbsp;stolet\u00ed se poda\u0159ilo definitivn\u011b \u201evym\u00fdtit\u201c por\u00e1\u017eku zv\u00ed\u0159at mimo \u00fast\u0159edn\u00ed jatky.\u00a0\u00a0\u00a0 <br \/>\r\nV&nbsp;p\u0159\u00ed\u0161t\u00edm d\u00edle se bl\u00ed\u017ee sezn\u00e1m\u00edme s\u00a0funkcemi jednotliv\u00fdch objekt\u016f v&nbsp;rozlehl\u00e9m are\u00e1lu i&nbsp;s\u00a0ka\u017edodenn\u00edm provozem v\u00a0jatk\u00e1ch.\u00a0\u00a0\u00a0\u00a0\u00a0<\/p>\r\n<h3>Pokra\u010dov\u00e1n\u00ed:\u00a0<a href=\"https:\/\/www.praha7.cz\/holesovicka-tovarna-na-maso-ii\/\" target=\"_blank\" rel=\"noopener\">Hole\u0161ovick\u00e1 tov\u00e1rna na maso II.\u00a0<\/a><\/h3>","protected":false},"excerpt":{"rendered":"[perex] P\u0159ipojen\u00ed Hole\u0161ovic-Bubn\u016f k\u00a0Praze v\u00a0roce 1884 p\u0159ineslo nov\u011b vnikl\u00e9 Praze 7 v\u0161estrann\u00fd rozvoj.
