Zevnit\u0159 je ale organismem, kter\u00fd produkuje odpad. Spousta sedmi\u010dkov\u00fdch podnik\u016f se ji\u017e sna\u017e\u00ed hledat cesty, jak mno\u017estv\u00ed odpad\u016f sni\u017eovat a&nbsp;chovat se zodpov\u011bdn\u011bji k&nbsp;\u017eivotn\u00edmu prost\u0159ed\u00ed. P\u011bt z&nbsp;nich se ned\u00e1vno rozhodlo j\u00edt je\u0161t\u011b d\u00e1le a&nbsp;pokou\u0161ej\u00ed se b\u00fdt cirkul\u00e1rn\u00ed.<br \/>\r\n[\/perex]<\/p>\r\n<p>\u017dijeme v&nbsp;syst\u00e9mu, kter\u00fd je st\u00e1le navykl\u00fd na to, fungovat line\u00e1rn\u011b \u2013 suroviny p\u0159etvo\u0159\u00edme na v\u00fdrobek, kter\u00fd spot\u0159ebujeme, a&nbsp;o&nbsp;to, co z&nbsp;n\u011bj zbude, se moc nestar\u00e1me. Odpad v\u0161ak m\u016f\u017ee b\u00fdt zdrojem, kter\u00fd se navr\u00e1t\u00ed do ob\u011bhu. A&nbsp;pr\u00e1v\u011b o&nbsp;to se sna\u017e\u00ed cirkul\u00e1rn\u00ed ekonomika.<\/p>\r\n<p>Jak mohou cirkul\u00e1rn\u011b fungovat kav\u00e1rensk\u00e9 provozy, od listopadu minul\u00e9ho roku zji\u0161\u0165uje nov\u00fd projekt <a href=\"https:\/\/incien.org\/cirkularni-ekonomika\/\">Cirkul\u00e1rn\u00ed kav\u00e1rny<\/a>, na kter\u00e9m spolupracuje neziskov\u00e1 organizace <a href=\"https:\/\/incien.org\/\">Institut cirkul\u00e1rn\u00ed ekonomiky<\/a> (INCIEN), svozov\u00e1 firma Pra\u017esk\u00e9 slu\u017eby, je\u017e projekt finan\u010dn\u011b za\u0161t\u00edtila, a&nbsp;radnice Prahy&nbsp;7. Nemohl by v\u0161ak fungovat bez ochoty p\u011bti kav\u00e1ren ze Sedmi\u010dky \u2013 Cobry, Letky, Lajky, Vnitroblocku a&nbsp;Alchymisty, kter\u00e9 se uvolily b\u00fdt tak tro\u0161ku pokusn\u00fdmi kr\u00e1l\u00edky. Spolupr\u00e1ce v\u0161ech t\u011bchto partner\u016f je skv\u011blou p\u0159\u00edle\u017eitost\u00ed, jak syst\u00e9m t\u0159\u00edd\u011bn\u00ed a&nbsp;dal\u0161\u00edho vyu\u017e\u00edv\u00e1n\u00ed odpad\u016f nastavit optim\u00e1ln\u011b pro ob\u011b strany \u2013 kav\u00e1rny jako producenty a&nbsp;svozovou firmu jako zpracovatele. Jak? Prost\u0159ednictv\u00edm rozhovor\u016f, pozorov\u00e1n\u00edm p\u0159\u00edmo v&nbsp;kav\u00e1rn\u00e1ch i&nbsp;na z\u00e1klad\u011b spolupr\u00e1ce s&nbsp;dal\u0161\u00edmi firmami a&nbsp;organizacemi, kter\u00e9 mohou p\u0159in\u00e9st alternativn\u00ed \u0159e\u0161en\u00ed.<\/p>\r\n<p>Samy zapojen\u00e9 kav\u00e1rny maj\u00ed velkou motivaci tyto ot\u00e1zky \u0159e\u0161it. Mnoh\u00fdm z&nbsp;nich se ji\u017e poda\u0159ilo n\u011bkter\u00e9 zajet\u00e9 po\u0159\u00e1dky zm\u011bnit a&nbsp;sv\u016fj provoz podstatn\u011b zefektivnit. Do karet jim hraje tak\u00e9 st\u00e1le se zvy\u0161uj\u00edc\u00ed z\u00e1jem z\u00e1kazn\u00edk\u016f, co\u017e potvrzuj\u00ed nap\u0159\u00edklad zku\u0161enosti v&nbsp;Letce: \u201eEkologick\u00e1 stopa podnikatelsk\u00fdch subjekt\u016f v&nbsp;gastronomii je nezanedbateln\u00e1, a&nbsp;pokud se poda\u0159\u00ed naj\u00edt zp\u016fsob, jak ji zm\u00edrnit, a&nbsp;p\u0159itom ekonomicky nadm\u011brn\u011b nezat\u00ed\u017eit podnikatele, je to jist\u011b krok spr\u00e1vn\u00fdm sm\u011brem. Mimo jin\u00e9 jako jeden z&nbsp;aspekt\u016f utv\u00e1\u0159ej\u00edc\u00edch celkov\u00fd obraz kav\u00e1rny sm\u011brem ke st\u00e1le n\u00e1ro\u010dn\u011bj\u0161\u00ed klientele. Z&nbsp;dlouhodob\u00e9ho hlediska by se tento \u201atrend\u2018 m\u011bl st\u00e1t n\u011b\u010d\u00edm samoz\u0159ejm\u00fdm a&nbsp;v\u011b\u0159\u00edm, \u017ee bude i&nbsp;jedn\u00edm z&nbsp;krit\u00e9ri\u00ed, podle kter\u00fdch si budou host\u00e9 vyb\u00edrat, kde sv\u00e9 pen\u00edze utrat\u00ed,\u201c popisuje v\u00fdvoj v&nbsp;kav\u00e1rn\u00e1ch spolumajitel Letky Jakub Tyl\u0161.<\/p>\r\n<p><strong>Obaly, obaly a&nbsp;zase obaly<\/strong><br \/>\r\nV\u0161ech p\u011bt zapojen\u00fdch podnik\u016f se shoduje, \u017ee nejv\u011bt\u0161\u00ed probl\u00e9m a&nbsp;tak\u00e9 nejv\u011bt\u0161\u00ed objem produkovan\u00e9ho odpadu tvo\u0159\u00ed obalov\u00e9 materi\u00e1ly. A\u0165 u\u017e jde o&nbsp;obaly dod\u00e1van\u00fdch potravin a&nbsp;n\u00e1poj\u016f, nebo o&nbsp;jednor\u00e1zov\u00e9 n\u00e1dob\u00ed na produkty, kter\u00e9 si z\u00e1kazn\u00edk odn\u00e1\u0161\u00ed s&nbsp;sebou. Probl\u00e9mem je zde zejm\u00e9na neflexibilita v\u00fdrobc\u016f a&nbsp;dodavatel\u016f a&nbsp;nedostatek alternativn\u00edch kan\u00e1l\u016f, p\u0159es kter\u00e9 by mohly kav\u00e1rny suroviny odeb\u00edrat. \u201eNejv\u00edce n\u00e1s tr\u00e1p\u00ed balen\u00ed samotn\u00fdch v\u00fdrobk\u016f. A\u010dkoliv objedn\u00e1v\u00e1me v\u011bt\u0161inu sortimentu ve skle, p\u0159ijde i&nbsp;tak zabalen\u00fd je\u0161t\u011b v&nbsp;kartonu a&nbsp;plastu. Velk\u00fdm t\u00e9matem je tak\u00e9 ml\u00e9ko. Mno\u017estv\u00ed tetrapak\u016f je p\u0159i na\u0161\u00ed ka\u017edodenn\u00ed spot\u0159eb\u011b opravdu d\u011bsiv\u00e9, r\u00e1di bychom proto na\u0161li dodavatele kvalitn\u00edho ml\u00e9ka ve vratn\u00fdch obalech,\u201c sd\u00edl\u00ed sv\u00e9 zku\u0161enosti Zuzana Vachov\u00e1, mana\u017eerka Vnitroblocku.<br \/>\r\n<br \/>\r\nProti jednor\u00e1zov\u00fdm obal\u016fm u\u017e dnes broj\u00ed velk\u00e9 mno\u017estv\u00ed organizac\u00ed i&nbsp;gastronomick\u00fdch provoz\u016f. Skoncovat s&nbsp;plastem je jedna v\u011bc, naj\u00edt odpov\u00eddaj\u00edc\u00ed alternativy s&nbsp;men\u0161\u00edm dopadem na \u017eivotn\u00ed prost\u0159ed\u00ed je v\u0161ak v\u011bc druh\u00e1. Po velk\u00e9m boomu \u201erozlo\u017eiteln\u00fdch\u201c plast\u016f, kter\u00e9 v\u0161ak ve v\u00fdsledku nejsou v\u016fbec v\u00fdhrou, nebo\u0165 je aktu\u00e1ln\u00ed syst\u00e9m zpracov\u00e1v\u00e1n\u00ed odpad\u016f neum\u00ed \u0159e\u0161it, se od nich kav\u00e1rny op\u011bt odkl\u00e1n\u011bj\u00ed a&nbsp;sna\u017e\u00ed se hledat jin\u00e9 mo\u017enosti. Podobnou zku\u0161enost maj\u00ed tak\u00e9 v&nbsp;Cob\u0159e. \u201eNejv\u00edce \u0159e\u0161\u00edme dodavatele na take away a&nbsp;jednor\u00e1zov\u00e9 n\u00e1dob\u00ed. Zaj\u00edm\u00e1 n\u00e1s, jakou maj\u00ed tyto materi\u00e1ly recyklovatelnost, jak se daj\u00ed d\u00e1le zpracov\u00e1vat. Aktu\u00e1ln\u011b se sna\u017e\u00edme naj\u00edt hlavn\u011b n\u00e1hradu za \u201akompostovateln\u00e9\u2018 plasty. Prozat\u00edm je zde dost omezen\u00fd trh, vn\u00edm\u00e1me v\u0161ak, \u017ee pomalu za\u010d\u00edn\u00e1 reagovat na nov\u00e9 trendy,\u201c \u0159\u00edk\u00e1 s&nbsp;nad\u011bj\u00ed<br \/>\r\nMichal Sold\u00e1n, vedouc\u00ed denn\u00edho provozu v&nbsp;Cob\u0159e. To potvrzuje nap\u0159\u00edklad projekt Oto\u010d kel\u00edmek, kter\u00fd do \u010ceska p\u0159inesl sice plastov\u00e9, ale znovu pou\u017eiteln\u00e9 kel\u00edmky. Narazit na n\u011b m\u016f\u017eete u\u017e i&nbsp;na Sedmi\u010dce, mimo jin\u00e9 pr\u00e1v\u011b v&nbsp;p\u011bti zm\u00edn\u011bn\u00fdch \u201ecirkul\u00e1rn\u00edch\u201c kav\u00e1rn\u00e1ch. <br \/>\r\n<br \/>\r\n<strong>Nov\u00e9 desatero<\/strong><br \/>\r\nObalov\u00fd materi\u00e1l je v\u0161ak jen jedn\u00edm p\u0159\u00edkladem z&nbsp;n\u011bkolika oblast\u00ed, na kter\u00e9 se projekt zam\u011b\u0159uje a&nbsp;kter\u00e9 by se v&nbsp;souvislosti s&nbsp;kav\u00e1rensk\u00fdm provozem m\u011bly \u0159e\u0161it. INCIEN si proto stanovil tzv. desatero cirkul\u00e1rn\u00ed kav\u00e1rny, neboli deset bod\u016f, je\u017e by se tzv. cirkul\u00e1rn\u00ed kav\u00e1rna m\u011bla sna\u017eit naplnit: <br \/>\r\n<br \/>\r\n1. Nepl\u00fdtvat j\u00eddlem,<br \/>\r\n2. Va\u0159it bez zbytk\u016f, <br \/>\r\n3. K\u00e1vovou sedlinu pos\u00edlat k&nbsp;dal\u0161\u00edmu vyu\u017eit\u00ed (t\u0159eba na v\u00fdrobu peletek na topen\u00ed, daj\u00ed se v&nbsp;n\u00ed p\u011bstovat houby \u010di extrahovat oleje pro dal\u0161\u00ed vyu\u017eit\u00ed, pou\u017e\u00edt se d\u00e1<br \/>\r\ndo peeling\u016f \u010di s&nbsp;n\u00ed m\u016f\u017eete drhnout p\u0159ip\u00e1len\u00e9 hrnce), <br \/>\r\n4. Nakupovat bez obal\u016f,<br \/>\r\n5. Vyh\u00fdbat se jednor\u00e1zov\u00e9mu n\u00e1dob\u00ed, <br \/>\r\n6. Nakupovat z&nbsp;druh\u00e9 ruky a&nbsp;druhotn\u00fdch surovin, opravovat, <br \/>\r\n7.&nbsp;\u0160et\u0159it vodou, <br \/>\r\n8.&nbsp;\u0160et\u0159it energi\u00ed, <br \/>\r\n9. Ukl\u00edzet ekologicky,<br \/>\r\n10. T\u0159\u00eddit, recyklovat, kompostovat.<br \/>\r\n<br \/>\r\nCesty za napl\u0148ov\u00e1n\u00edm tohoto desatera se bude INCIEN sna\u017eit hledat ve spolupr\u00e1ci s&nbsp;kav\u00e1rnami v&nbsp;pr\u016fb\u011bhu \u0161esti m\u011bs\u00edc\u016f trv\u00e1n\u00ed projektu. C\u00edlem je v&nbsp;prv\u00e9 \u0159ad\u011b sni\u017eovat objem odpad\u016f. U&nbsp;odpad\u016f, kter\u00fdm se vyhnout nelze, by pak m\u011bl b\u00fdt nastaven funguj\u00edc\u00ed syst\u00e9m t\u0159\u00edd\u011bn\u00ed a&nbsp;n\u00e1sledn\u00e9ho zpracov\u00e1n\u00ed. Fin\u00e1ln\u00edm v\u00fdstupem bude p\u0159\u00edru\u010dka, kter\u00e1 by m\u011bla kav\u00e1rensk\u00fdm provoz\u016fm slou\u017eit jako z\u00e1kladn\u00ed n\u00e1vod na efektivn\u011bj\u0161\u00ed nakl\u00e1d\u00e1n\u00ed s&nbsp;odpady a&nbsp;dal\u0161\u00edmi zdroji a&nbsp;d\u00edky tomu motivovat tak\u00e9 dal\u0161\u00ed podniky, aby<br \/>\r\nud\u011blaly konkr\u00e9tn\u00ed kroky sm\u011brem k&nbsp;\u201ecirkul\u00e1rn\u011bj\u0161\u00edmu\u201c provozu.<\/p>","protected":false},"excerpt":{"rendered":"[perex] Kav\u00e1rna je m\u00edstem, kter\u00fdm proud\u00ed \u017eivot.
